Time 45m

Number Of Ingredients 6

3 pounds of chicken wings
4 tablespoons melted butter
1 tablespoon garam masala
1 tablespoon minced ginger
1 teaspoon minced garlic
some salt

Steps:

  • Cut 3 pounds of chicken wings into 3 sections; save the wing tips for stock. Toss the wings with a little neutral oil to keep them from sticking.
  • Heat a charcoal or gas grill; the fire should be moderately hot and the rack 4 to 6 inches from the heat. Leave one side of the grill cooler for indirect cooking.
  • Put the wings on the cool side of the grill. Cover the grill, and cook, checking and turning once or twice, until most of the fat has been rendered and the wings are cooked through, 15 to 20 minutes.
  • While the wings cook, combine 4 tablespoons melted butter, 1 tablespoon garam masala, 1 tablespoon minced ginger, 1 teaspoon minced garlic and some salt in a large bowl. (It should be the texture of a thin paste.)
  • When the wings are cooked, add them to the bowl with the sauce, and toss to coat. Now put the wings on the hot part of the grill, and cook, uncovered, turning as necessary, until they're nicely browned on both sides.

TANDOORI CHICKEN WINGS

Tandoori Chicken Wings image

A tandoor clay oven grills and roasts at the same time, but you can get a similar effect by broiling. Chicken wings are ideal for this technique: The meat is protected by a garam masala-spiced yogurt marinade, and the wing tips get crisp. Glaze the wings with store-bought mango chutney after cooking. The versatile spice blend called garam masala is available at most supermarkets and at Kalustyan's.

Yield Makes about 3/4 cup

Number Of Ingredients 11

1 tablespoon dried miniature rosebuds (optional), stems removed and discarded
1 (1-inch) piece cinnamon stick, broken into pieces
2 bay leaves
1/4 cup cumin seeds
1/3 cup coriander seeds
1 tablespoon green cardamom pods
1 tablespoon whole black peppercorns
2 teaspoons whole cloves
1 dried red chile
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon ground mace

Steps:

  • In a medium skillet, heat roses, cinnamon, bay leaves, cumin seeds, coriander seeds, cardamom pods, peppercorns, cloves, and chile over medium-high heat, stirring often, until cumin is browned, 2 1/2 to 3 minutes. Transfer to a spice grinder or coffee mill along with nutmeg and mace and grind to a fine powder. Store in an airtight container for up to 4 months.

Tips:

  • Use a variety of chicken wings for different textures and flavors. Chicken thighs are great for a juicy and flavorful wing, while chicken breasts are leaner and have a milder flavor.
  • Marinate the chicken wings for at least 30 minutes, or up to overnight. This will help the flavors to penetrate the chicken and make them more tender.
  • Use a high smoke point oil for frying the chicken wings. This will prevent the oil from burning and smoking.
  • Fry the chicken wings in small batches so that they don't overcrowd the pot or fryer. This will help them to cook evenly.
  • Cook the chicken wings until they are golden brown and crispy. This will ensure that they are cooked through and safe to eat.

Conclusion:

Garam Masala Chicken Wings are a delicious and easy-to-make appetizer or main course. They are perfect for parties or game day gatherings. With a few simple ingredients and a little bit of time, you can create a dish that will be sure to impress your guests. So next time you're looking for a tasty and unique chicken wing recipe, give Garam Masala Chicken Wings a try. You won't be disappointed!
