Yield Serves 4

Number Of Ingredients 10

2 1/2 cups water
1 cup lentils
2 large carrots, peeled, diced
1 bay leaf
1 15- to 16-ounce can garbanzo beans (chick-peas), rinsed, drained
1/2 basket cherry tomatoes, halved
1 cup chopped fresh parsley
5 green onions, chopped
4 1/2 tablespoons olive oil
2 tablespoons plus 1 teaspoon fresh lemon juice

Steps:

  • Combine 2 1/2 cups water, lentils, diced carrots and bay leaf in heavy medium saucepan. Bring to boil. Reduce heat, cover and simmer until lentils are just tender, about 25 minutes. Drain; transfer to large bowl. Cool.
  • Mix all remaining ingredients into lentils. Season to taste with salt and pepper. (Can be prepared 4 hours ahead. Cover and refrigerate.)

Tips:

  • Use Canned Beans: Canned beans are a great time-saver and just as nutritious as dried beans. Rinse them well before using to remove excess sodium.
  • Choose Fresh, Ripe Tomatoes: Look for tomatoes that are brightly colored and free of blemishes. If you can, use homegrown or farmers' market tomatoes for the best flavor.
  • Add Some Crunch: To add some extra texture and crunch to your salad, consider adding some chopped celery, cucumber, or radishes.
  • Don't Skip the Dressing: The dressing is what really brings this salad together. Make sure to use a good quality olive oil and vinegar, and season it to taste with salt and pepper.
  • Serve Immediately or Chill: This salad can be served immediately or chilled for later. If you're chilling it, let it come to room temperature for about 30 minutes before serving so that the flavors can meld together.

Conclusion:

This garbanzo bean and tomato salad is a simple but delicious dish that's perfect for summer gatherings. It's packed with protein, fiber, and vitamins, and it's also very versatile. You can add other ingredients to your liking, such as chopped cucumbers, red onions, or crumbled feta cheese. No matter how you serve it, this salad is sure to be a hit!
