If you're looking for green bean recipes, there's a good chance you'll stumble on a Southern interpretation of this soulful side. Our version uses fresh green beans and potatoes, but we have a fun trick-we peel a thin strip around the middle of each potato before cooking for textural contrast and pretty presentation.

Yield Serves 4 (serving size: about 1 cup)

Number Of Ingredients 8

2 teaspoons olive oil
1 medium onion, halved and very thinly sliced
2 garlic cloves, sliced
1/4 teaspoon crushed red pepper
3 cups unsalted chicken stock
3/4 teaspoon kosher salt
1 1/2 pounds small red and gold potatoes,a strip peeled from the center of each
1 pound green beans, trimmed

Steps:

  • Heat oil in a 5-quart saucepan over medium-high. Add onion. Cook, stirring occasionally, until just tender, about 2 minutes. Add garlic and red pepper, and cook, stirring frequently, until onion is tender, about 3 minutes.
  • Add stock, salt, and potatoes. Bring to a boil, then reduce to a steady simmer. Simmer 10 minutes or until the potatoes are just tender enough to be pierced with a fork but still firm.
  • Add green beans, cover, and simmer until very tender, about 6 minutes. Use a slotted spoon to transfer the potatoes and green beans to a serving dish. Bring the liquid to a boil, and cook until reduced to 1 cup, about 6 minutes. Spoon over the vegetables, and gently fold to mix. Serve hot.

Time 1h25m

Yield 6 servings

Number Of Ingredients 5

8 small new potatoes, halved if large
Salt and freshly ground black pepper
4 slices bacon, cut into thirds
1 medium onion, finely chopped
2 pounds fresh green beans, ends trimmed

Steps:

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

FRESH GREEN BEANS WITH NEW POTATOES

Fresh Green Beans With New Potatoes image

I do not use pork to season anything. Being brought up in the south it is hard not to get pork fat in everything so I have learned how to get a better flavor without using unhealthy swine. This recipe includes my house seasoning recipe, which can be found under Ronda's House Seasoning. You will not acheive the correct taste and flavor without it.

Tips:

  • Choose fresh, tender green beans: Look for beans that are bright green and snap easily when you bend them. Avoid beans that are limp or have brown spots.
  • Trim the green beans: Remove the tough ends of the green beans before cooking. You can also cut the beans into smaller pieces if desired.
  • Boil the green beans and potatoes separately: This will help to ensure that both the green beans and potatoes are cooked evenly. Boil the green beans for 3-5 minutes and the potatoes for 10-12 minutes, or until they are tender.
  • Drain the green beans and potatoes: After boiling, drain the green beans and potatoes in a colander. Rinse them with cold water to stop the cooking process.
  • Sauté the green beans and potatoes: Heat a large skillet over medium heat. Add the green beans, potatoes, butter, onion, garlic, and salt and pepper to taste. Sauté for 5-7 minutes, or until the vegetables are heated through.
  • Serve the green beans and potatoes: Serve the green beans and potatoes immediately, garnished with fresh parsley or chives if desired.
