GARLIC-AND-HERB OVEN FRIED HALIBUT
Well most of it's done in the oven! The original recipe is from Cooking Light but I've made a couple modifications. While the fish is baking I deglaze the frying pan with a flavored vinegar (I use a tequila-lime vinegar) and a little water, then top the fish with the sauce before serving. Here's a great resource for more ideas on deglazing http://www.foodnetwork.com

HALIBUT WITH CREAMY GARLIC AND HERB SAUCE
This fresh dish is sure to please at your next dinner party! The red pepper flakes add a little kick, and toasted almonds add a delicious crunch. I like to serve this with orzo pasta or rice pilaf. This dish can also be made with fat-free half and half and low-sodium chicken broth for healthier options.

CRISPY HERB CRUSTED HALIBUT WITH CURLY CELERY AND HARICOTS VERTS

Steps:
- Vegetables:
- Using a sharp veggie peeler, shave the celery to get long thin shavings. Put the celery shavings in ice water with half a lemon and its juice and let sit for at least 1 hour or overnight in the refrigerator. The celery will get very crunchy, curly and cute.
- Bring a pot of well salted water to a boil, over medium heat and set up a bowl of well salted ice water. Toss the haricots verts in the boiling water and cook until the beans are tender but still firm. Remove the beans from the boiling water and plunge immediately into the ice water and let them cool. When they are cold and still vibrantly green, remove them from the ice water and reserve.
- Fish:
- Season the fish fillets with salt. Combine the herbs and the potato flakes in a shallow dish. Dip the flesh side of each fillet into the egg wash and then press them into the herb/potato flake mixture. Put on a sheet tray with the crusted side up.
- To cook and assemble everything:
- Preheat the oven to 350 degrees F.
- Coat a large saute pan with olive oil and heat it over medium-high heat. When the oil is hot but not smoking, add the fish, crusted side down. When the crust has become golden and crispy, flip them over, then transfer the fish to a baking sheet lined with a cooling rack and put in the preheated oven for 5 to 6 minutes.
- Remove the oil in the saute pan and add new oil. Toss in the garlic and crushed red pepper. When the garlic becomes golden and aromatic remove it and discard. Toss in the reserved haricots verts, season with salt, to taste, and roll them around in the oil to heat through. When they are hot, turn off the heat and reserve them in the pan.
- Remove the celery from the ice water and dry in a salad spinner to remove the excess water. Add the celery to the pan with the beans. Squeeze in the juice from the remaining lemon half and season with salt, if needed.
- Divide the veggies between 4 serving plates and top with the crusted fish.

GARLIC HALIBUT
My 22 year old son was looking for a way to cook up some halibut and found this in one of our cookbooks. It went together easily and he was very proud of the results. It was very flavorful and we plan to fix it again. From "How to Grill" by Steven Raichlen. Regarding the cilantro root -- my husband looked at every Asian market in the area to no avail thinking if anyone would have cilantro root they would. He felt it was essential to the recipe despite the recommendation of adding additional cilantro instead. He mentioned to me he had been looking for cilantro root -- "Did you think of the herb section of the nursery?" I bought a little 4-inch pot of cilantro from the herb section and washed the roots thoroughly (a chore, I will admit). Sometimes you can find cilantro with some of the roots attached, but rarely. You decide how labor intensive you want this recipe to be, but there is an option for you if you are looking for cilantro root.

Steps:
- Rinse the fish fillets under cold running water and blot dry with paper towels. Arrange the fillets in a nonreactive baking dish just large enough to hold them.
- Prepare the marinade: Pound the garlic, ginger, cilantro leaves and root, if using, and sugar to a paste in a mortar with a pestle. (I would suggest starting with pounding the garlic). You could also purée in a mini chopper or food processor. Work in the fish sauce, sake, sesame oil, salt, and pepper. Spoon marinade on both sides of the fillets. Cover the fish with plastic wrap and let marinate in the refrigerator for 30 minutes to 1 hour, turning the fillets once or twice.
- Set up the grill for direct grilling and preheat to high. When ready to cook, oil a fish basket, if using, or brush and oil the grill grate. Place the fillets in the basket on the hot grate. Grill until each side of the fillets is browned and cooked through, 4 to 6 minutes per side. If grilling directly on the grate, brush the tops of the fillets with oil before gently turning them with a spatula. To test for doneness, press a fillet with your finger. It should break into clean flakes when fully cooked. Another test is to insert a metal skewer in the side of a fillet. when it is done the skewer will come out very hot to the touch after 20 seconds.
- Note: To grill a fish fillet on a fish grate, place the grate on top of the regular grate and preheat to high. Oil the fish grate with a folded paper towel dipped in oil or lift it with tongs and spray with oil. As an added precaution against sticking, brush or spray the fillets themselves with oil.

HALIBUT WITH HERB SAUCE
Steps:
- Puree first 5 ingredients in processor. Season sauce to taste with salt and pepper.
- Preheat broiler. Brush fish with 2 tablespoons oil. Sprinkle with salt and pepper. Broil until just opaque in center, about 5 minutes per side. Transfer fish to plates. Spoon sauce over and serve.
Tips:
- Choose firm, fresh halibut steaks. Look for steaks that are opaque in color and have a mild, briny smell.
- Don't overcook the halibut. Halibut is a delicate fish that can easily become dry and tough if overcooked. Cook it until it is just opaque in the center, about 4-5 minutes per side.
- Use fresh herbs and vegetables. Fresh herbs and vegetables will give your halibut dish the best flavor. If you don't have fresh herbs on hand, you can use dried herbs, but use about half the amount.
- Don't be afraid to experiment with different flavors. Halibut is a versatile fish that can be paired with a variety of flavors. Try different herbs, spices, and sauces to find your favorite combination.
- Serve halibut with your favorite sides. Halibut can be served with a variety of sides, such as rice, potatoes, vegetables, or salad.
Conclusion:
Garlic and herb halibut is a delicious and healthy meal that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its delicate flavor and flaky texture, halibut is a surefire hit with everyone who tries it. So next time you're looking for a quick and easy seafood dish, give garlic and herb halibut a try.
