Garlic-Basil Tortellini Soup image

I created the recipe through trial and error. I make it with vegetable broth, but feel free to use chicken broth if you prefer. It is a quick fix with frozen pasta and canned beans, it's sure to heat up the chilliest of winter nights.-Linda Kees, Boise, Idaho

Tips:

  • Use a variety of vegetables to add flavor and nutrients to the soup. Some good options include carrots, celery, onions, peppers, and spinach.
  • If you don't have any fresh basil, you can use dried basil instead. Use about 1 teaspoon of dried basil for every 1 tablespoon of fresh basil.
  • You can adjust the amount of garlic in the soup to suit your taste. If you like a lot of garlic, add an extra clove or two. If you're not a fan of garlic, you can reduce the amount or omit it altogether.
  • Be careful not to overcook the tortellini. Cook it according to the package directions, or until it is al dente.
  • Serve the soup with a sprinkle of Parmesan cheese and a side of crusty bread.
