Tips:

  • To make the most tender beef stroganoff, use a high-quality cut of beef, such as sirloin or tenderloin. You should look for meat that's well-marbled with fine lines of fat.
  • When slicing the beef, cut it against the grain. This will help to make the meat more tender when cooked.
  • Don't overcrowd the pan when cooking the beef. If you do, the meat will steam instead of sear, and it won't develop a nice crust.
  • Cook the beef in batches, if necessary. This will help to ensure that all of the meat is cooked evenly.
  • Use a good quality dry white wine. A dry white wine will help to brighten the flavor of the stroganoff and balance out the richness of the sauce.
  • Don't boil the sauce. Bring it to a simmer and then let it cook gently for at least 15 minutes, or until the sauce has thickened.
  • Serve the stroganoff over egg noodles, mashed potatoes, or rice.
