4 chicken thighs
salt, to taste
pepper, to taste
6 cloves garlic, minced
1 small onion, chopped
½ cup brown sugar
½ cup chicken broth
1 tablespoon fresh thyme, minced
1 tablespoon fresh parsley, minced

Steps:

  • Season the chicken thighs with salt and pepper.
  • Heat a cast-iron skillet or pan over medium-high heat, and add the chicken skin side down.
  • Cook the chicken until it has a dark brown and crispy skin. Flip the chicken and cook until the chicken is cooked through, about 5 more minutes. Remove the chicken from the pan and set aside.
  • Add the garlic and onion to the remaining chicken fat and cook, stirring frequently until the onions are softened and caramelized.
  • Add the brown sugar, chicken broth, thyme, and parsley and stir to combine. Bring the sauce to a boil and and cook for 1-2 minutes, until slightly reduced.
  • Add the chicken back to the pan and coat it in the garlic brown sugar sauce.

¼ cup low-sodium chicken broth
2 tablespoons packed brown sugar
1 tablespoon reduced-sodium soy sauce
2 cloves garlic, grated
¼ teaspoon crushed red pepper
4 boneless, skinless chicken thighs (1 pound), trimmed
⅛ teaspoon salt
⅛ teaspoon ground pepper
1 scallion, thinly sliced
2 tablespoons chopped cilantro

Steps:

  • Preheat oven to 425°F.
  • Combine broth, brown sugar, soy sauce, garlic and crushed red pepper in a small skillet over medium heat; cook, stirring, until the sugar has dissolved. Pour half the sauce into an 8-inch-square baking dish.
  • Season chicken with salt and pepper and place in the baking dish. Pour the remaining sauce over the chicken; reserve the skillet. Bake, turning once, until an instant-read thermometer inserted in the thickest part of a thigh registers 165°F, about 30 minutes.
  • Use tongs to transfer the chicken to a serving plate. Pour the sauce from the baking dish into the small skillet. Bring to a boil and cook, stirring, until reduced to 1/4 cup, 3 to 4 minutes. Drizzle the sauce over the chicken and sprinkle with scallions and cilantro.

6 boneless, skinless chicken thighs
salt and freshly ground black pepper, to taste
3 tablespoons salted butter, divided
4 cloves garlic, minced
1/4 cup brown sugar, packed
1 tablespoon honey
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 cup brown sugar

Steps:

  • Season chicken thighs with salt and pepper, to taste.
  • Melt 2 tablespoons butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; set aside.
  • Melt remaining tablespoon butter in the skillet. Add garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes. Remove from heat.
  • Stir in brown sugar, honey, oregano, thyme and basil until well combined. Return chicken to the skillet. Sprinkle chicken with additional brown sugar if you want the extra sweetness.

  • Preheat the oven to 400 degrees F (200 degrees C).

2/3 cup white vinegar
1/4 cup lemon-lime soda
2 to 3 tablespoons minced garlic
