bamboo skewers

  • Place parsley and olive oil into a resealable plastic bag. Add shrimp, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 2 hours. Soak skewers in water during the last 30 minutes or so.

3 tablespoons butter
1 small shallot, finely minced

3 tablespoons butter
1 bunch fresh parsley, chopped
3 cloves garlic, minced
1 pound uncooked medium shrimp, peeled and deveined
⅓ cup dry white wine
½ lemon, juiced
salt and freshly ground black pepper to taste

Steps:

  • Melt butter in a large skillet over medium heat. Add parsley and garlic and cook for 30 seconds. Add shrimp and cook until pink, 3 to 4 minutes. Drizzle with white wine and lemon juice. Season with salt and pepper. Saute briefly until flavors combine, 1 to 2 minutes.

I got this recipe off of another site but modified it quite a bit to suit our tastes. It is very easy and will certainly impress company or make a nice dish for a romantic meal! The key is to use fresh herb in this dish. Serve with a good crusty bread, green salad and a nice white wine.

2 tablespoons olive oil
1 lb large shrimp, peeled and deveined
3 cloves garlic, minced
3 -4 tablespoons fresh basil, chopped
3 tablespoons butter
1/4 cup of a good white wine (Do not use cooking wine!)
1/2 lb linguine, cooked al dente
chopped fresh parsley (to garnish)

Steps:

  • Heat the oil in a skillet.
  • Add the shrimp and cook until just pink.
  • Add the garlic, basil and butter.
  • Saute just until butter is slightly melted.
  • Add wine and bring to a boil then reduce and simmer just until slightly reduced and alcohol evaporates.
  • Add cooked Linguini to pan and toss to coat.
  • Garnish with fresh parsley.

1 roll (1 lb) refrigerated polenta, cut into 1/2-inch slices
2 tablespoons olive oil
Salt and pepper, to taste
1 lb uncooked deveined peeled shrimp
4 tablespoons butter, melted
1 cup fresh parsley, chopped
2 cloves garlic, grated or finely chopped
Juice of 1 lemon, plus lemon wedges for serving
Pinch of crushed red pepper flakes
Additional chopped fresh parsley

Steps:

  • Heat gas or charcoal grill.
  • Place large sheet of heavy-duty foil or double layer of regular foil on work surface. Rub foil with a little olive oil.
  • Arrange slices of polenta in center of foil. Drizzle with olive oil; sprinkle with salt and pepper.
  • In medium bowl, toss shrimp with melted butter, parsley, garlic and lemon juice. Sprinkle with salt, pepper and crushed red pepper flakes. Add shrimp on top of polenta, getting all the butter out of the bowl.
  • Bring short ends of foil together, and fold twice to seal; fold in sides to seal, leaving room for steam.
  • Place packets on grill over medium-high heat. Cover grill; cook 10 to 15 minutes or until shrimp are pink.
  • Remove from grill; unwrap and top with additional fresh parsley and lemon wedges.

24 ounces Simply Potatoes Traditional Mashed Potatoes
1 lb frozen cooked shrimp
1 teaspoon cumin
1 (1 1/4 ounce) packet taco seasoning mix
4 cups chicken broth
5 garlic cloves, peeled and chopped
3 tablespoons butter
salt & pepper

Steps:

  • Heat mashed potatoes according to package directions.
