Tips:

  • To ensure even cooking, place the chicken in a single layer in the baking dish.
  • Use a good quality maple syrup for the best flavor in the maple-chipotle. The dark, robust flavor of pure maple syrup cannot be imitated.
  • If you don't have chipotle powder, you can substitute 1 teaspoon of ground dried chipotle peppers.
  • The maple-chipotle marinade can be prepared up to 3 days in advance. Just store it in an airtight container in the refrigerator until you're ready to use it. Marinating the chicken for longer will allow the flavors to develop and permeate the meat.
  • Baste the chicken with the maple-chipotle marinade halfway through the cooking time for even browning and to prevent the chicken from drying out.
  • If making in advance, cover the roasted chicken and store it in the refrigerator for up to 3 days. When you're ready to serve, reheat the chicken in a preheated oven at 350°F for 15-20 minutes, or until warmed through.

Conclusion:

This maple-chipotle chicken is a delicious and versatile dish that's perfect for a weeknight meal or a special occasion. The marinade infuses the chicken with a smoky, sweet, and spicy flavor that's sure to please everyone at your table. Serve it with roasted vegetables, rice, or your favorite side dishes for a complete meal.
