If you're like me, you just can't get enough of that beautiful bulb, garlic. This recipe produces a savory burger with an interesting flavor that is sure to please the palate. This recipe should work equally well with ground turkey, though I haven't tested that. Please note the variations listed in the ingredients and directions. Note: I *LOVE* herbs, so if the cilantro, garlic, etc., seems a bit strong to you, vary to your taste.

1 lb ground beef (or chuck or sirloin)
1/8 cup dried cilantro (or a handful of fresh chopped cilantro)
3 tablespoons minced garlic
1/4 cup honey
3 tablespoons soy sauce
1 1/2 tablespoons ginger paste
fresh ground pepper (peppercorn medley)
4 buns (one for each patty)
fresh minced onions (optional) or dried parsley (optional)
salt (optional)
canned black beans (small can, drained and rinsed) (optional)
prepared spaghetti sauce (optional) or pizza sauce (optional)

Steps:

  • Mix all ingredients together (except ground pepper) and form into patties of your preferred size and thickness.
  • Grill burgers to your preferred doneness (rare to well-done). Crack fresh ground pepper over the burgers as they grill.
  • If desired, salt burger to taste and top with cheese in the last minute or so of grilling so that it melts down over the burger. Burger already has soy sauce, so I find that salt is unnecessary.
  • Place burger on your favorite bun, add toppings, and dig in!
  • Options: Add any of the optional ingredients to the mix before grilling. Fresh minced onions add alot of flavor, but not everyone likes onions. Adding black beans is an easy way to bulk up the mix and add some great fiber and nutrition. You might wish to try just half a can the first time, if you're unsure you'll like them. For burgers that verge on meatloaf, add about 1/4 cup of spaghetti or pizza sauce to the mix (and/or top the formed patties with additional sauce when grilling).

These burgers are zesty and full of flavor combining mushrooms, bacon, and balsamic vinegar with ground beef. My boyfriend--an Italian chef and a meat lover--was taken away by the taste!

8 slices bacon
½ white onion, diced
1 clove garlic, minced
1 tablespoon balsamic vinegar, or to taste
5 fresh mushrooms, chopped
½ pound ground beef
½ cup dry bread crumbs
1 teaspoon Italian seasoning
1 ½ tablespoons grated Parmesan cheese
1 egg
salt and pepper to taste
1 malted wheat hamburger bun, split in half
2 slices tomato
2 slices Swiss cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place bacon in a skillet over medium heat, and cook until brown and crisp. Remove bacon from skillet and drain on paper towels.
  • Return the skillet to the heat and increase the temperature to medium-high. Add the onion and garlic, and stir fry until the onion is soft and the garlic begins to brown. Add the balsamic vinegar, and cook while stirring for one minute. Add the chopped mushrooms, and cook for three additional minutes. Remove pan from heat and set aside.
  • Finely chop 4 slices of the bacon (reserving the remaining 4). In a medium bowl, combine the chopped bacon, ground beef, bread crumbs, Italian seasoning, Parmesan cheese, mushroom mixture and egg. Mix well using hands. Season with salt and pepper, and form into two patties.
  • Open the two halves of the hamburger bun on an ungreased cookie sheet. Place one beef patty on each half, and cover each with one slice of tomato, 2 slices of the reserved bacon and one slice of Swiss cheese.
  • Bake for 25 minutes in the preheated oven, or until meat has cooked through.

3 tablespoons finely chopped mixed fresh herbs (including parsley,basil,oregano,chives, or tarragon leaves)
1 garlic clove, minced
1/2 cup salted butter, softened
1 1/2 lbs ground round or 1 1/2 lbs ground chuck
coarse salt
black pepper
6 deli hamburger buns (such as kaiser)
melted butter

Steps:

  • Place all the herbs, garlic, pepper, and butter in a small mixing bowl and beat with a wooden spoon until slightly fluffy.
  • (you can do the mixing with a or food processor) Place a 12" square piece of plastic wrap or parchment paper on your work surface and mound the flavored butter in the center.
  • Roll herb butter into cylinder shape within plastic, twisting the ends to compress the butter.
  • Chill the butter in the refrigerator or freeze until firm.
  • Butter will keep for up to 5 days in the refrigerator or up to 3 months in the freezer.
  • Burger Preparation: Make hamburger patties as usual, but for each one place your thumb in the middle and press an indentation almost through (but not quite) to the other side of the meat.
  • Unwrap formed butter and cut crosswise into 1/4-1/2" discs. (You will be using approximately 4 tablespoons Herb-Garlic Butter per 1 1/2 pound of ground meat).
  • Form hamburger patty fully around one butter disc, pressing gently to seal the disc into the dead center of the meat.
  • (not too much pressing! It will make your burgers dense and tough) Place burgers on hot grill (preheated to high if using a gas grill).
  • Grill burgers until cooked to doneness, (about 5 to 7 minutes per side for medium-done).
  • Place burgers on a serving plate, add cheese, if desired, but do not serve for about 5 minutes, to allow flavors to fully meld.
  • Brush buns with melted butter and toast on the grill for a few seconds.
  • Serve with any toppings of your choice.
