3 teaspoons balsamic vinegar
1.5 teaspoons soy sauce
1/2 teaspoon sriracha (or to taste)
1 teaspoon brown sugar
1.5 tablespoons olive oil
4-5 large garlic cloves (sliced thin)
8 oz white mushrooms (sliced)
1/8 teaspoon black pepper (or to taste)
1 tablespoon chopped basil

Steps:

  • In a bowl mix together balsamic vinegar, soy sauce, sriracha and brown sugar. Mix well and set aside.
  • Heat olive oil in a cast iron skillet (or any other pan) on medium heat. Once the oil is hot, add the sliced garlic and let them cook until they start changing color, around 2 minutes.
  • Then add the sliced mushrooms and stir. Cook the mushrooms on medium heat for 6 to 7 minutes until they release all the moisture and start turning golden-ish in color.
  • Add in the prepared sauce to the pan. Mix well until sauce is well combined with the mushrooms.
  • Add the black pepper and stir well.
  • Cook for a minute and then turn off the heat. Stir in the basil.
  • Serve these balsamic mushrooms with more basil. These can be enjoyed with rice, noodles or even on a toast!

2 garlic cloves, crushed
375 g button mushrooms, 13 ounces and wiped clean
salt, to taste
black pepper, to taste
1/4 teaspoon cayenne pepper

bread, assorted crusty style to serve

Steps:

  • In a large skillet, melt butter and add the garlic. Over medium heat saute garlic until soft and golden, stirring occasionally.

olive oil (for drizzling)
1 cup mayonnaise
1/3 cup basil leaves, fresh minced
1 teaspoon balsamic vinegar
3 tablespoons balsamic vinegar
6 tablespoons butter, divided (3/4 stick)
1 lb portabella mushroom, stems trimmed and cut into 1/4-inch slices (about 5 large)
1 lb bread, halved horizontally (pain rustique, ciabatta or facaccia)
1/3 cup parmesan cheese, freshly grated
