Kosher salt
1 tablespoon extra-virgin olive oil

Steps:

  • Heat oven to 425 degrees and place a rack in the top third of the oven.
  • Scrub the potatoes under running water to remove any grit or dirt. Slice the potatoes in half lengthwise and place them in a medium saucepan. Fill the saucepan with enough water to cover them by 1 inch. Stir in 1 teaspoon salt and bring the water to a boil over medium-high heat.   • Remove the garlic from the pouch and squeeze out the flesh. Add the roasted garlic, egg, lemon juice, salt and pepper in a blender and process. Pour in the olive oil in a slow, steady stream until the aioli emulsifies. Fold in sour cream and adjust seasoning with salt and pepper. Garnish with chives.

  • Preheat the oven to 400 degrees F.
  • Make the potatoes: Heat the oil in an ovenproof 12-inch non-stick skillet over medium-low heat. Add the potatoes and cook, stirring, until soft, about 10 minutes. (The potatoes shouldn't brown.)   • Season the snapper with salt and pepper. Place 1 fillet on top of each mound. Add the wine, bring to a boil, and cook until reduced by half, about 2 minutes. Pour in the clam broth. Bring to a boil, cover, and braise in the oven until the snapper is barely opaque in the center, about 7 to 8 minutes.
  • Using a slotted spatula, transfer the potato mounds topped with the snapper to the center of 4 warmed dinner plates. Return the skillet to high heat and boil until lightly thickened, about 2 minutes. Add the tomatoes, olives and parsley and cook for 15 seconds. 8 garlic cloves, minced
1 teaspoon cumin seeds, toasted or ground, or 1 teaspoon ground cumin
3/4 teaspoon smoked sweet paprika
Freshly ground pepper
6 tablespoons extra-virgin olive oil, plus more for drizzling (optional)
3/4 cup water
1/4 cup fresh lemon juice
8 ounces day-old rustic bread, crust removed, bread torn into 2-inch pieces
Lemon wedges, for serving

Steps:

  • Put potatoes into a saucepan, and cover with water by about 1 inch. Bring to a boil, and add 1 teaspoon salt. Cook potatoes until just tender, about 15 minutes. Drain, and let cool.
  • Preheat oven to 400 degrees. Using a kitchen mallet, pound both sides of calamari bodies a few times to tenderize, then cut in half crosswise, or into thirds if large. (Leave tentacles whole, or halve if large.)
  • Toss together calamari, chickpeas, potatoes, olives, half the oregano, the garlic, cumin, paprika, salt, pepper, and 3 tablespoons oil in a shallow 13-by-9-inch baking dish. Add water and lemon juice. Cover with parchment and then foil, and cut about six vents. Bake 30 minutes.
  • Meanwhile, toss bread, 1/2 teaspoon salt, a pinch of pepper, and remaining oregano and 3 tablespoons oil.
  • Uncover baking dish, and sprinkle with bread mixture. Cook, uncovered, until bread is golden brown, about 20 minutes. Sprinkle with oregano, salt, and pepper. Drizzle with oil if desired, and serve with lemon wedges.

Crock Pot Roasted New Potatoes With Garlic and Herbs Recipe
2 lbs small waxy boiling potatoes
4-5 garlic cloves, to your taste, peeled
1 tablespoon olive oil
1/2 teaspoon dried rosemary
1/4 teaspoon kosher salt or coarse sea salt
1 pinch dried thyme

Steps:

  • Yukon Gold, baby new red or white potatoes work well for this recipe. Scrub the potatoes and drain them. Put them in the slow cooker with the garlic. Drizzle with the olive oil and sprinkle with the rosemary, salt, and thyme. With a spoon or your hands, toss the potatoes and garlic to coat them lightly witht the oil and herbs. Spread out the potatoes as evenly as possible in the crock. Cover and cook on High until the potatoes are tender withen pierced with a sharp knife, 2 1/2 to 3 1/2 hours. Serve immediately

I found this recipe in a special insert to my local paper (years ago), but only just recently tried it. I thought there wasn't anything you could do new to a potato, but I was so wrong! Friends and family also recommended the aioli mix over fish. . .

3 lb small new potatoes, unpeeled
1/4 c mayonnaise
6 clove garlic, coarsely chopped
1/4 c fresh lemon juice
2 tsp grated lemon rind
1/2 tsp kosher salt, divided
1/2 tsp coarsely ground black pepper, divided
3 Tbsp olive oil
1/4 c finely chopped fresh chives

Steps:

  • 1. In a large pot of salted water, boil potatoes until just thoroughly cooked, but not completely soft, 10 - 15 minutes depending on size. Test by piercing a potato with a thin skewer; when the skewer meats some resistance but can slide all the way through, the potatoes are ready. Drain potatoes immediately and set aside until cool enough to handle.
  • 2. Combine mayonnaise, garlic, lemon juice, lemon rind, 1/4 tsp salt and 1/4 tsp pepper in a blender; blend until smooth.
  • 3. Heat grill to high.
  • 4. Cut potatoes in half, brush the cut sides with oil, and season with remaining 1/4 tsp salt and 1/4 tsp pepper. Grill potatoes cut side down until golden brown and just thoroughly cooked, 2 - 3 minutes.
  • 5. Place potatoes on a platter, drizzle with the aioli and sprinkle with chives.

1/2 pound baby red potatoes (1-3/4-inch wide, about 6), halved
1 tablespoon olive oil
1 garlic clove, minced
2 tablespoons shredded Parmesan cheese
1 tablespoon lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place potatoes in a saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 10-15 minutes or until tender. Drain; remove from pan., In same pan, heat oil over medium-high heat. Return potatoes to pan; cook and stir 4-5 minutes or until lightly browned. Add garlic; cook 1 minute longer. Remove from heat. Add remaining ingredients; toss to combine.
