¼ cup olive oil

¼ cup grated Parmesan cheese
¼ teaspoon seasoned salt

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the potatoes in a mixing bowl and drizzle with olive oil. Season with garlic, thyme, and 1/4 teaspoon seasoned salt. Toss until evenly coated. Lift the fries out of the bowl and spread onto a nonstick baking sheet in a single layer. Save the remaining oil in the bowl.
  • Bake in the preheated oven 30 minutes, flipping the fries halfway through baking. Return the fries to the bowl with the olive oil, sprinkle with 1/2 cup Parmesan cheese and parsley. 3 russet potatoes, scrubbed and cut lengthwise into about 12 wedges
3 tablespoons vegetable oil
Salt and freshly cracked black pepper
Salt and freshly cracked black pepper
3 tablespoons unsalted butter
2 tablespoons grated fresh garlic
1 tablespoon chopped fresh parsley
2 teaspoons chopped fresh chives
1 teaspoon fresh thyme leaves, chopped

Steps:

  • Preheat the oven to 475 degrees F.
  • Soak the potato wedges in a bowl of water for 10 minutes. Drain the potatoes and then fully pat them dry with paper towels or a lint-free dish cloth.
  • Layer a baking sheet with 2 tablespoons oil and generously sprinkle with salt and pepper.
  • Add the potatoes to the pan and drizzle with the remaining 1 tablespoon oil. Sprinkle with salt and pepper and spread them evenly in a single layer on the pan. This is a recipe I kind of just discovered one day and it is now a firm family favourite in our house, I also make roast potatoes the same way - delicious!!! Be careful not to set the over too high and watch the amount of oil you put in, I have been thinking about using a spray oil but haven't yet tried it, perhaps you can and let me know how they turn out!!! Also, you can use dried herbs but I prefer fresh as I grow my own and they taste so much better, you can also use a different strength of olive oil if you wish, but I prefer extra virgin. I wouldn't recommend using anything other than olive oil mind you, it adds to the flavour! I also like to add a little bit of BBQ seasoning to mine but this is optional, if you want it, add it before cooking...

3 sprigs fresh rosemary
2 sprigs fresh thyme
3 garlic cloves
extra virgin olive oil

Steps:

  • Slice the potatoes into fries (chips for those in the UK!) LEAVE THE SKINS ON! Then, rinse under cold water and leave to drain on one side.
  • Pull leaves off of thyme and rosemary and discard stalks.
  • Slice and chop garlic cloves.
  • Slice up thyme and rosemary a little to release the flavours.
  • Add a couple of tablespoons of oil to a roasting dish and place in the over for 5 minutes to heat.

There are many oven fry recipes but this combibation gives a tasty slightly crunchy fry. I do not use any oil on the potatoes but the spices & cheese stick better if you do. I will suggest spraying them in the recipe but it is not necessary. Holding the fries in the ice cold water until baking prevents them from discoloring. I use a Baking stone but a cookie sheet works too. If you wish leave the skin on but scrub them well.

1 tbsp salt
1 tbsp cornstarch
1 egg white
1 clove of garlic, finely minced
1 tsp sriracha (or more/less depending on preference)
1-2 tsp thyme leaves (fresh or dried)
2-3 tbsp olive oil
salt and pepper for seasoning

Steps:

  • Preheat your oven to 350 degrees F (180 degrees C), line a large, rimmed baking tray with parchment paper, and lightly grease with some of the olive oil. Wash the potatoes to remove any dirt (leave as much skin on them as poss.). Halve the potatoes lengthways and place into a medium pot of cold water, add the salt and bring to a boil. Cook for 6-8 minutes to parboil the potatoes. Drain the potatoes and leave in the colander for 5 minutes so they can dry off. Slice each potato-half lengthways into 4 wedges. Place into a large bowl, sprinkle over the cornstarch and toss with your hands to coat (see notes). Preheat your oven to 350 degrees F (180 degrees C), line a large, rimmed baking tray with parchment paper, and lightly grease with some of the olive oil.
