Time 1h15m

Number Of Ingredients 8

1/4 cup extra-virgin olive oil
1/2 cup finely chopped fresh rosemary leaves
6 garlic cloves, minced
1 teaspoon finely grated lemon zest
Coarse salt and ground pepper
1 top round beef roast (3 pounds), trimmed and tied
2 pounds small potatoes, halved or quartered if large
Horseradish Sauce

Steps:

  • Preheat oven to 400 degrees. In a small bowl, stir together 3 tablespoons oil, rosemary, garlic, and lemon zest; season with salt and pepper. ROAST CHICKEN WITH POTATOES AND GARLIC

Roast Chicken with Potatoes and Garlic image

Roast the whole chicken breasts with the skin on and bone in to yield maximum flavor and juiciness, but remove the skin before eating for a lighter meal.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken     Chicken Breast Recipes

Number Of Ingredients 8

3 one-and-a-half-pound whole chicken breasts, bone in and skin on
3 pounds mixed small potatoes, such as red new potatoes, Yukon gold, and fingerling
1 head garlic
2 tablespoons olive oil
1 1/2 teaspoons salt
1/2 teaspoon freshly ground pepper
Rosemary springs for garnish
Olive-oil, cooking spray

Steps:

  • Let the chicken breasts stand at room temperature for 15 minutes. Heat oven to 400 degrees with two racks centered. Lightly spray two 14-by-12-inch roasting or jelly-roll pans with cooking spray. The potatoes may be peeled or not, as desired. If the potatoes are larger than 1 1/2 inches in diameter, cut them into 1 1/2- to 2-inch chunks.
  • Separate garlic head into cloves. Divide potatoes and garlic cloves between roasting pans. Drizzle potatoes and garlic in each pan with 1 tablespoon olive oil. Lightly toss potatoes and garlic until they are covered with oil. Place one whole chicken breast, skin-side up, in one pan. Place remaining two whole breasts in the other pan, skinsides up. Sprinkle ingredients in each pan with 3/4 teaspoon salt and 1/4 teaspoon pepper. Roast for 30 minutes. Rotate pans in oven, and use a spatula to turn potatoes for even browning. Continue to cook 20 to 25 minutes, until chicken skin is crisp and an instant-read thermometer inserted into the breast meat reads 180 degrees. Don't touch any bones with thermometer; bones conduct heat and will give a false reading.
  • To serve, divide the potatoes evenly between six plates with a few cloves of roasted garlic for each person. Use a sharp knife to remove each half of breast meat from the bone. Remove skin from each serving before eating. Garnish with rosemary sprigs.

Coat with oil and sear all sides of the roast until very brown. Lower the heat and add the onions, garlic, ginger, tomatoes, sambal, sugar and wine. Check for seasoning. Cover tightly and let simmer for 3 to 3 1/2 hours. Turn the roast at least every hour. In a large bowl, mix together the zucchinis, peppers, carrots, mushrooms and season with salt and pepper. During the last hour of roasting, top the roast with the vegetables and cover. Roast is ready when it is fork tender. Remove roast and check the vegetables/sauce for seasoning. Plating On a very large platter, place a large mound of vegetables/sauce in the middle. Surround with potatoes and place roast on top. Serve with side of East-West Mustard. Slice roast tableside.
  • Preheat a hotel pan or heavy metal baking dish in a 375 oven. Toss the potatoes, garlic, olive oil, parsley with salt and pepper. When the pan is hot, add the potatoes. They should sizzle. Roast until they turn brown, then turn oven down to 350 degrees. Cook for about 30 minutes or until a knife easily pierces the spuds.
  • Mix the 2 powders together and add enough water to make a paste. Mix in the sugar and Dijon. Serve in a small side dish.

Tips:

  • Choose the right potatoes: For the best results, use a variety of potatoes that are suitable for roasting, such as Yukon Gold, Russet, or Red potatoes.
  • Cut the potatoes evenly: This will help them cook evenly. If the potatoes are too large, cut them into smaller pieces.
  • Toss the potatoes with oil and seasonings: This will help them to brown and develop flavor. You can use olive oil, vegetable oil, or melted butter. For seasonings, you can use salt, pepper, garlic powder, onion powder, or any other herbs or spices that you like.
  • Roast the potatoes at a high temperature: This will help them to get crispy on the outside and tender on the inside. The ideal roasting temperature is 425 degrees Fahrenheit (220 degrees Celsius).
  • Don't overcrowd the pan: If you overcrowd the pan, the potatoes will steam instead of roast. Make sure that the potatoes are spread out in a single layer on the pan.
  • Roast the potatoes until they are tender: You can check the potatoes for doneness by piercing them with a fork. If the fork goes through easily, the potatoes are done.

Conclusion:

Roasted potatoes are a delicious and versatile side dish that can be served with a variety of main courses. They are easy to make and can be customized to your own taste. With the right tips and techniques, you can make perfect roasted potatoes every time.
