I serve it with angel hair pasta (lightly tossed with fresh herbs and olive oil), a basic spring mix salad with vinegarette, and a crusty, hearty garlic bread - enjoy!

4 -6 salmon fillets (no skin)
3 tablespoons extra virgin olive oil
fresh ground pepper
3/4 cup prepared pesto sauce (refrigerated) or 3/4 cup fresh homemade pesto sauce
1/2 cup parmesan cheese
3 sliced plum tomatoes (optional)

Steps:

  • Lightly coat a baking pan with cooking spray.
  • Place each salmon fillet in the baking pan and drizzle with olive oil.
  • Apply freshly ground pepper to taste over each fillet.
  • Gently spread pesto sauce over each fillet.
  • Sprinkle parmesean cheese over each fillet.
  • Optional: Place plum tomatoes slices on each fillet and sprinkle with a bit of additional parmesean cheese.

1 salmon fillet
1 cup fresh parsley, chopped
½ cup walnuts, chopped
1 tablespoon garlic, minced
pepper, to taste
¼ cup lemon juice, + 3 tablespoons
½ cup olive oil, + 2 tablespoons
¼ teaspoon pepper
¼ teaspoon salt
¼ teaspoon cayenne pepper
2 tablespoons olive oil
¼ cup lemon juice

Steps:

  • Mix together parsley, walnuts, garlic, 3 tbsp lemon juice, olive oil, and pepper. Stir until fully incorporated. Set aside.
  • Mix together pepper, salt, and cayenne pepper. Rub filet of salmon with seasonings.
  • In a large skillet, heat 2 tablespoons of olive oil. Place salmon skin side down. Cook for 5 minutes. Flip salmon, then cook for another 5 minutes

Kosher salt and freshly ground pepper
3 tablespoons unsalted butter
4 cloves garlic, minced
1/2 teaspoon red-pepper flakes, plus more for serving
1 pound yellow cherry or Sungold tomatoes, halved
1/2 cup dry white wine, such as Sauvignon Blanc
4 skinless wild-salmon fillets (1 pound), preferably Alaskan
1/2 cup grated Pecorino Romano
Chopped fresh parsley, for serving

  • Cook pasta in a pot of salted boiling water 1 minute less than per package directions. Reserve 1 cup pasta water; drain. In a large straight-sided skillet over medium-high heat, melt 2 tablespoons butter.

1 pound penne pasta
1 ½ pounds boneless, skinless salmon fillets
4 tablespoons salted butter
1 cup fresh asparagus tips
1 cup quartered artichoke hearts
½ cup chopped green onions
2 tablespoons minced garlic
¼ teaspoon salt
¼ teaspoon pepper
1 ½ cups heavy whipping cream
¼ cup pesto
1 ½ cups grated Parmesan cheese
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and rinse with cold water; set aside.
  • Meanwhile, cut salmon into small pieces.

One 16-ounce box fusilli pasta
2 tablespoons olive oil
1 large red bell pepper, cut into small dice
1 pound skinless salmon fillet, cut into 1/2-inch cubes
1/4 teaspoon red pepper flakes, optional
1/4 teaspoon cracked black pepper
Juice of 1/2 lemon
1 1/2 cups lightly packed basil leaves, plus more for garnish
1 large clove garlic
1/4 cup pine nuts, toasted (see Cook's Note)
1/4 teaspoon kosher salt
1/4 teaspoon cracked black pepper
1/2 cup extra-virgin olive oil
1/4 cup grated Parmigiano-Reggiano, plus more for garnish (optional)

Steps:

  • Bring a large pot of water to a boil over high heat. Add a large pinch of salt and cook the pasta according to package directions for al dente, about 8 minutes.
  • Meanwhile, place a large skillet over medium-high heat. Add the oil and bell pepper. Cook until the bell pepper starts to soften, about 1 minute. Add the salmon and red pepper flakes, if using, to the skillet and sprinkle with salt and the black pepper. Cook for about 2 minutes without stirring. Then continue cooking and stirring until the salmon is cooked through, about 2 minutes. Add the lemon juice. Transfer the mixture to a large bowl and set aside.
  • For the pesto: Place the basil, garlic, pine nuts, salt and black pepper in a blender. Start on low speed, then increase to medium. With the motor running, slowly drizzle in the olive oil and blend until smooth. Stop the blender and scrape down the sides. Add the cheese and blend a few seconds just to incorporate. Taste and adjust the seasoning.
  • Drain the pasta and add it to the bowl with the salmon. Add the pesto and toss. Taste and adjust the seasoning. Serve immediately, or refrigerate until chilled. Finish with basil leaves and grated cheese if desired.

SALMON OR SHRIMP AND PESTO WITH PENNE

This is great with either leftover salmon or shrimp. One night we had a leftover salmon steak and another time we had extra boiled shrimp, it's great either way! I make my own pesto and have it ready frozen in ice cube forms, stored in zipper bags in the freezer. Lots of flavor from capers and olives (feel free to use Kalamata) create this extravagant meal from mere leftovers. Enjoy!

1 lb penne pasta, cooked al dente
2 -3 tablespoons olive oil
1 red onion, chopped
4 -5 garlic cloves, minced
1 cup dry white wine
1 cup shrimp stock (or chicken broth)
2 -4 tablespoons pesto sauce
1/2 cup parsley, chopped
1/2 cup green olives, pitted and chopped
1 lemon, zested and juiced
2 tablespoons capers, rinsed
1 salmon steak, cooked and cut into bite sized pieces
black pepper, freshly ground to taste

Steps:

  • Heat a large skillet and add the olive oil.
  • Saute the onion until translucent.
  • Add the garlic, and stir, saute about 2-3 more minutes.
  • Then add the stock, and wine and slowly simmer until reduced by half.
  • Taste and season with pepper then add the pesto, lemon juice and zest, the olives and capers and stir well.
  • Remove from the heat and toss in the salmon or shrimp, the parsley and toss with the pasta.
  • Serve in large pasta bowls.

Tips:

  • Use fresh ingredients, especially for the pesto. Fresh basil, garlic, and olive oil will give you the best flavor.
  • Don't overcook the salmon. It should be cooked through but still moist and flaky.
  • Serve the dish immediately. The pesto will lose its flavor if it sits for too long.
  • Garnish the dish with fresh herbs, such as basil, parsley, or chives.
