1 (12 ounce) package egg fettuccine
1/3 pound prosciutto di Parma
2 tablespoons butter
1 to 1 1/4 cups half-and-half
1 cup (3 healthy handfuls) grated Parmigiano-Reggiano
2 pinches ground nutmeg or about 1/4 teaspoon freshly grated nutmeg
Coarse ground black pepper
A pinch coarse salt

Steps:

  • Bring salted water to a rolling boil for the pasta and cook to package directions for al dente pasta.
  • Slice prosciutto ham into thin strips across. Separate ham ribbons and loosely pile them up and set aside.
  • Preheat a large skillet over moderate heat. Drain the pasta. Add the butter to the pan and melt. Add half-and-half to the melted butter. Stirring constantly, add cheese and cook sauce 1 minute. Season with nutmeg, pepper, and a pinch of salt. Turn off heat under sauce and add pasta to the skillet. Toss pasta until sauce coats the noodles evenly. Add prosciutto ribbons and toss to evenly distribute them. Mangia!

1 package (9 ounces) refrigerated fettuccine or linguine
1 tablespoon butter
1/2 pound sliced fresh mushrooms
1 small onion, chopped
10 ounces fresh baby spinach (about 12 cups)
1 jar (15 ounces) Alfredo sauce
1/4 pound thinly sliced prosciutto, coarsely chopped
Coarsely ground pepper, optional

  • Cook fettuccine according to package directions; drain., Meanwhile, in a large skillet, heat butter over medium-high heat; saute mushrooms and onion until tender. 1 medium beet (6 ounces), peeled and quartered
1 pound gemelli
4 thin slices prosciutto (2 1/2 ounces), cut into 1/4-inch pieces
2 tablespoons extra-virgin olive oil
1 small onion, finely diced
1/4 head red cabbage, cut into 1/2-inch pieces (4 cups)
1 cup dry red wine, such as Pinot Noir
Grated Pecorino Romano, for serving

Steps:

  • Bring a large pot of water to a boil; add salt and beet. Cook pasta 2 minutes less than instructed on package (beet should be knife-tender). Drain; when beet is cool enough to handle, chop into small pieces.
  • Place prosciutto in a large saute pan over medium-high; cook, stirring occasionally, until crisp, about 3 minutes. Transfer to a plate.
  • Swirl oil into pan and add onion. Cook, stirring occasionally, until softened, 3 to 4 minutes. Add cabbage and cook until slightly tender, about 2 minutes. Stir in beet. Increase heat to high, pour in wine, and cook, stirring frequently, until reduced by half, about 2 minutes.

1 ½ tablespoons olive oil, divided
2 (6 ounce) skinless, boneless chicken breast halves
2 tablespoons butter
3 tablespoons minced garlic
8 sprigs fresh cilantro
8 leaves fresh basil
1 cup grated Parmesan cheese
2 tablespoons Italian seasoning
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon crushed red pepper
1 (16 ounce) package gemelli pasta

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat 1 tablespoon oil in a large, deep skillet. Add chicken and cook until no longer pink in the center and the juices run clear, 7 to 8 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken and cut into small chunks.

This is a recipe from my Tastes of Home Quick Cooking book of 2006. It originally calls for a jar of alfredo sauce, but I am not a fan so I used Recipe #260818 (Lower Fat Alfredo Sauce) and changed the servings to 3 to get a perfect amount. The pasta is wonderful and through my searches on zaar I haven't found one just like it. It is even better paired along with a glass of red wine!

4 ounces prosciutto di Parma
1/4 cup butter
2 large shallots
3/4 cup heavy cream
1/2 cup parmigiano-reggiano cheese
1/2 cup pecorino romano cheese
12 ounces fettuccine (even better Spinach Fettucine)
salt and pepper (To taste. Using white pepper will slightly alter the taste from Black and you won't have black dots )
parsley (to garnish)

Steps:

  • The cheese selected here are of the best quality. It's your main ingredient of the sauce, try not to cheat. Parmesean/Romano cheese in a can does not melt at all, because of additives. Highly not recommended.
  • Boil water for pasta, cooking until al-dente.
  • Slice prosciutto into squares.
  • Fine Dice Shallots.
  • Grate Cheeses.
  • Melt butter in a generous sized cooking pan (pan with sides) on low heat. Add shallots and cook till tender/translucent. Add salt and pepper to taste (remember there's alot of salt in these cheeses.) Add heavy cream, stirring constantly until the cream almost boils. Remove from heat. Add drained pasta into pan with cheeses. Stir until you've found decadence in a pan!
  • Soon as I can I'll post a picture, but with green pasta, use a white or cream colored serving dish and garnish with parsley and a few ribbons of parmasean cheese! Bon appetito! (cooking time depends really on your pasta choice).
  • Variations:.
  • For example, skip proscuitto and cook shrimp in sauce before adding pasta and cheese. OMG! Add cooked diced chicken breast. Try pancetta or bacon instead of prosciutto. Use with tortellini? Add Mozarella cheese on top of individual servings and bake it under a 450* pre-heated oven for 10-15 min until mozarella is melted and just starting to brown.

6 ounces sliced prosciutto
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed of excess moisture
2 cups milk
2 cups ricotta cheese
1 garlic clove, minced
Coarse salt and ground pepper
1/2 cup grated Parmesan

Steps:

  • Preheat oven to 400 degrees. Cook pasta a few minutes less than package instructions suggest. Cut prosciutto into thin strips.
  • In a 9-by-13-inch baking dish, toss pasta with spinach, half of prosciutto, milk, ricotta, and garlic. Season with salt and pepper. Top with remaining prosciutto and Parmesan. Bake until golden, 30 to 40 minutes.
