This recipe is just the thing to warm you on a cold winter night. It is especially nice with a scoop of vanilla ice cream melting into it.

### Summary: - George Washington Cherry Cobbler is a traditional dessert that dates back to the 18th century. - The dish was a favorite of the first president of the United States, George Washington. - It is a simple dish typically made with fresh cherries, sugar, butter, and a biscuit or pastry crust. - Variations of the recipe may include adding spices like nutmeg or cinnamon, or using a different type of fruit, such as apples or peaches. - The cobbler can be served warm or cold, with or without a scoop of vanilla ice cream or whipped cream. ### Baking tips: - To ensure a golden crust, make sure the butter is very cold before cutting it into the dry ingredients. - For a flaky crust, use a pastry blender or two forks to work the butter into the dry ingredients. - Do not overwork the biscuit or pastry crust, as this can make it tough. - If using fresh cherries, be sure to pit them before adding them to the cobbler. - If using canned cherries, be sure to rinse them well and remove any pits. - To prevent the cobbler from boiling over, place a piece of parchment paper or foil over the top of the dish before putting it in the over. ### General Cooking/Baking knowledge: - Baking is a science as well as an art. Understanding the basics of the chemical processes involved in cooking helps you make better food and avoid common pitfalls. - The two most important things that happen when you bake are the gelatinization of starch and the denaturing of protein. - Starch gelatinizes when it is mixed with a liquid and then brought to a high temperature, such as when you bake a cake or a casserole. - Protein denatures when it is exposed to heat, such as when you bake a steak or fry an egg. - By understanding these processes, you can better control the texture and quality of your food. ### Baking tips: - Follow the recipe carefully. This may seem obvious, but it's easy to get distracted when you're in the middle of a project. - Use the right tools for the job. This means using a good quality mixer, a sharp couteau, and the right type of pan. - Don't be afraid to experiment. Once you have a good understanding of the basics of cooking, you can start to experiment with different flavors and techniques. - Have fun! Cooking should be enjoyable, so relax and have fun with it.
