4 boneless skinless chicken thighs (about 1 pound)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
10 garlic cloves, peeled and halved
1/4 cup white wine or chicken broth
1-1/2 teaspoons minced fresh rosemary
1/2 teaspoon minced fresh sage
1 cup chicken broth
Hot cooked rice of your choice

Steps:

  • Sprinkle chicken with salt and pepper. In a large skillet, heat butter over medium-high heat; brown chicken on both sides. Remove from pan, reserving drippings., In same skillet, saute garlic in drippings over medium-high heat until light golden brown. Add wine and herbs; bring to a boil, stirring to loosen browned bits from pan. Cook until mixture is almost evaporated. Add broth and chicken; bring to a boil. Reduce heat; simmer, covered, until a thermometer inserted in chicken reads at least 170°, 10-12 minutes., To serve, spoon pan juices over chicken. Serve with rice.

2 tablespoons butter
1 (3 lb) chicken, cut into 8 pieces
4 medium onions, peeled and chopped
8 medium tomatoes, peeled and coarsely chopped
3 garlic cloves, peeled and minced
1/2 cup chopped mixed fresh herbs (parsley, cilantro, tarragon, basil, dill)
1/8 teaspoon hot red pepper flakes
salt
fresh ground black pepper

Steps:

  • Melt the butter in a large skillet and brown the chicken pieces on all sides. Stir in the chopped onions and cook for 10 minutes, continuing to stir occasionally.
  • Add the prepared tomatoes and cook, covered, for 30 minutes, or until the chicken is done.
  • Stir in the garlic, herbs, hot pepper, and salt and pepper to taste. Cook, covered, 5 minutes longer.

A very easy, delicious chicken dish. It is much better if you use fresh herbs, but if you can't get them, dried herbs work too. A variation on the recipe found in The Kosher Palette.

2 whole chicken, cut in quarters or eighths
1 teaspoon pepper
4 teaspoons tarragon, divided
4 teaspoons chives, divided
4 teaspoons parsley, divided
1/2 cup margarine
1/2 cup dry wine
1/4 cup fresh lemon juice
paprika

Steps:

  • Combine pepper and 2 tsp EACH of the herbs in a ziploc bag. (The original recipe called for 1 cup of flour and 1 tsp salt in addition to this stuff, but I have left them out to accomodate special diets and it worked well without them.).
  • Add the chicken, a few pieces at a time, and shake to coat well.
  • Place chicken in large roasting pan, skin side up.
  • Combine margarine, wine, lemon juice and the remaining 2 tsp of each herb in a small saucepan. Heat on a medium flame, stirring, until well combined.
  • Pour over chicken, cover with foil.
  • Bake at 375F for one hour covered; then remove cover, sprinkle with paprika and bake another 30 minutes or so, until chicken is done and lightly browned.

4 bone-in chicken breast halves (2 pounds)
2 tablespoons olive oil
1 tablespoon grated onion
2 garlic cloves, minced
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon coarsely ground pepper
1/4 teaspoon rubbed sage
1/8 teaspoon dried marjoram
1/8 teaspoon hot pepper sauce
4-1/2 teaspoons minced fresh parsley
