GERMAN CUCUMBER SALAD WITH SOUR CREAM

German Cucumber Salad with Sour Cream image

This is a very light, tasty salad, and not sweet like many cucumber salads. It's very refreshing with a tangy bite from the green onions. I used dried herbs, of course using less, and it was still very tasty. I got the recipe many years ago from a recipe board online, but do not remember the source. However, it was attributed to a man who made this for his guests at an inn he ran in Germany. I included slicing the vegetables in the approximate time.

GURKENSALAT (GERMAN CUCUMBER SALAD)

Gurkensalat (German Cucumber Salad) image

A traditional German favorite that I have loved since I was a child. This recipe is quick, easy, and delicious. Substitute cider vinegar for a different flavor. I prefer to leave the skins on the cucumbers for more texture and flavor, but they can also be peeled prior to slicing if desired. Flavor is best when marinated for several hours before serving.

GERMAN DILL CUCUMBER SALAD

Categories     Dairy     Vegetable     Side     No-Cook     Quick & Easy

Yield 8 servings

Number Of Ingredients 8

5 - 8 inch long and about 2 inches in diameter cucumbers
1 - large white onion
2 tablespoons - fresh minced dill
1 can (12 ounces) evaporated milk
1 teaspoon sugar
1/4 cup white vinegar
1 teaspoon black and red pepper blend
salt to taste

Steps:

  • Peel cucumbers and cut into thin slices. Place in large salad serving bowl. Peel onion and cut into rings. Break rings apart and add to bowl. Add remaining ingredients and stir well. Refrigerate for at least 4 hours. Serve with a slotted serving spoon.

Tips:

  • Choose the right cucumbers: Use firm, unwaxed cucumbers for the best results. English cucumbers are a good choice, as they have fewer seeds and a thinner skin.
  • Slice the cucumbers thinly: This will help the cucumbers absorb the dressing better. You can use a mandoline or a sharp knife to slice the cucumbers.
  • Use a good quality vinegar: The vinegar is one of the key ingredients in this salad, so it's important to use a good quality one. White vinegar or apple cider vinegar are both good choices.
  • Don't overdress the salad: The dressing should coat the cucumbers lightly, but not overpower them. Start with a small amount of dressing and add more to taste.
  • Chill the salad before serving: This will help the flavors to meld and make the salad more refreshing.

Conclusion:

German cucumber salad is a refreshing and flavorful side dish that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. With its combination of crisp cucumbers, tangy vinegar, and fresh herbs, this salad is sure to be a hit at your next potluck or barbecue. Enjoy this delicious and healthy salad!
