Time 1h53m

Yield 60 truffles

Number Of Ingredients 8

1/2 pound good bittersweet chocolate such as Lindt
1/2 pound good semisweet chocolate such as Ghiradelli
1 cup heavy cream
2 tablespoons Grand Marnier, optional
1 tablespoon prepared coffee
1/2 teaspoon good vanilla extract
Confectioners' sugar
Cocoa powder

Steps:

  • Chop the chocolates finely with a sharp knife. Place them in a heat-proof mixing bowl.
  • Heat the cream in a small saucepan until it just boils. Turn off the heat and allow the cream to sit for 20 seconds. Pour the cream through a fine-meshed sieve into the bowl with chocolate. With a wire whisk, slowly stir the cream and chocolates together until the chocolate is completely melted. Whisk in the Grand Marnier, if using, coffee, and vanilla. Set aside at room temperature for 1 hour.
  • With 2 teaspoons, spoon round balls of the chocolate mixture onto a baking sheet lined with parchment paper. Refrigerate for 30 minutes, until firm. Roll each dollop of chocolate in your hands to roughly make a round ball. Roll in confectioners' sugar, cocoa powder, or both. These will keep refrigerated for weeks, but serve at room temperature.

CHOCOLATE TRUFFLES

Yield about 50

Number Of Ingredients 6

1 cup heavy cream
1 pound bittersweet chocolate, chopped finely
2 tablespoons unsalted butter
2 tablespoons liqueur, 2 tablespoons instant expresso, 1/2 teaspoon cinnamon or other spice, etc.
1 pound liquid tempered chocolate for dipping
2 cups cocoa powder

Steps:

  • Place heavy cream in a large pot and bring slowly to a boil over medium heat. Turn off the heat and stir in the chopped chocolate. Let stand for 2 minutes then stir well until smooth. Stir in the butter. Pour into the bowl of an electric mixer, and let cool until set.
  • Fit mixer with a paddle and beat the chocolate mixture on medium speed until aerated and fluffy, about 2 minutes. Beat in the liqueur and/or other flavorings. Load ganache into a pastry bag fitted with a half inch plain tube. Line several baking sheet with parchment or waxed paper. Pipe the truffle mixture out to form 1/2-inch balls. Place pans in the refrigerator to chill thoroughly.
  • To coat the truffles, set up your counter like this: tray of chilled centers on your left, bowl of melted tempered chocolate in the middle, large pan filled with cocoa powder on your right. (Reverse this if you're left handed) Pick up a truffle with your left hand. Touch the palm of your right hand lightly onto surface of tempered chocolate. Drop the truffle into your chocolaty right hand and roll it around to coat. Move your right hand over the pan of cocoa powder, turn your hand over, and drop the coated truffle into the cocoa. Repeat the process to coat about 5 truffles, then pick up a fork with your clean left hand and use it to roll the truffles round a bit in the cacao. (A second person can help do this continuously.) Repeat until the cocoa pan is filled with a lot of truffles. Then wash and dry your hands (or enlist your helper to do this); place the truffles in a strainer and shake it over the pan of cocoa powder to dislodge any excess cocoa. Place finished truffles on another paper-lined pan to set completely. Truffles do not need to be refrigerated.
  • Repeat coating processes with remaining centers.

A SYMPHONY OF FRENCH CHOCOLATE TRUFFLES

A Symphony of French Chocolate Truffles image

A Symphony or rather a selection of fresh cream chocolate truffles, this is my basic recipe with a few indulgent added extras.......such as toasted almonds, stem ginger with brandy or rum! These decadent rich truffles are perfect to finish of a dinner party with, especially if you serve them on a Truffle Tree - Recipe #270171 Do try to use very high quality minimum 70% solids chocolate, it really does make such a difference to the taste. They also freeze very well - which means you can make them in advance and at leisure; they only take about 1 hour to defrost at room temperature.

Time P1DT45m

Yield 36-40 Chocolate Truffles, 18-20 serving(s)

Number Of Ingredients 13

5 ounces very best quality 70% solids dark chocolate
5 fluid ounces thick double cream
1 ounce unsalted butter
2 tablespoons rum or 2 tablespoons brandy
1 tablespoon cocoa powder
1 ounce preserved gingerroot, very finely chopped, plus some extra cut into small pieces
1 ounce flaked toasted almond, very finely chopped
2 ounces dark chocolate (at least 70% cocoa solids)
1/2 teaspoon peanut oil
cocoa, for dusting
paper, sweet cases for the chocolate-coated truffle
1 sheet baking parchment paper (silicone paper)
60% minimum cocoa powder

Steps:

  • For the basic truffle mixture, break the chocolate into squares and place it in the bowl of a food processor. Switch on and grind the chocolate until it looks granular, like sugar.
  • Now place the cream, butter and rum or brandy in a small saucepan and bring these to simmering point. Then, with the motor switched on, pour the mixture through the feeder tube of the processor and continue to blend until you have a smooth, blended mixture.
  • Next transfer the mixture, which will be very liquid at this stage, into a bowl, allow it to get quite cold, then cover it with clingfilm and refrigerate overnight. Don't worry: it will thicken up after several hours.
  • Next day divide the mixture equally among four small bowls, and keep each one in the fridge until you need it. Then proceed with the following to make four different varieties. Make sure you have all the little paper cases opened out ready before your hands get all chocolatey!
  • Plain Truffles:.
  • For these, you simply sift 1 level dessertspoon of cocoa powder on to a flat plate, then take heaped half teaspoons of the first batch of truffle mixture and either dust each one straight away all over, which gives the truffle a rough, rock-like appearance, or dust your hands in cocoa and roll each piece into a ball and then roll it in the cocoa powder if you like a smoother look. Place it immediately into a paper case. Obviously, the less handling the better as the warmth of your hands melts the chocolate.
  • Ginger truffles:.
  • Mix the finely chopped ginger into the second batch of truffle mixture using a fork, then proceed as above, taking small pieces, rolling or not (as you wish), and dusting with cocoa powder before transferring each one to a paper case.
  • Toasted almond truffles:.
  • Sprinkle the very finely chopped toasted almond flakes on a flat plate, take half a teaspoonful of the third batch of truffle mixture and roll it round in the nuts, pressing them to form an outer coating.
  • Chocolate-coated truffles:.
  • For these you need to set the chocolate and oil in a bowl over some hot but not boiling water and allow it to melt until it becomes liquid, and then remove the pan from the heat.
  • Spread some silicone paper on a flat surface and, dusting your hands with cocoa, roll each truffle into a little ball.
  • Using two flat skewers, one to spike the truffle and one to manoeuvre it, dip each truffle in the chocolate so that it gets a thin coating and then quickly transfer it to the paper. If the chocolate begins to thicken, replace the pan on the heat so that it will liquefy again.
  • Leave the coated truffles to set completely then, using a palette knife; quickly transfer them into their waiting paper cases.
  • Cocoa Dusted Truffles:.
  • Simple and quick, I use 60% French Cocoa powder for an extra chocolate rush! Simply take each truffle and drop into a bowl of cocoa powder, and gently turn the truffles around to coat them.
  • Now arrange all the truffles in a box or boxes and cover. Keep them refrigerated and eat within three days. Alternatively, truffles are ideal for freezing.

TRIPLE CHOCOLATE TRUFFLE CAKE

Triple Chocolate Truffle Cake image

The grand prize winner in Ghirardelli's contest, created by Gigi Burton of New Jersey. I'm sure Ghirardelli's chocolate would make this sublime, but generic works just as well for a fine product.

Time 1h10m

Yield 8-12 serving(s)

Number Of Ingredients 8

3 cups semi-sweet chocolate chips
1 cup unsalted butter, room temperature
8 large eggs, chilled
1/4 teaspoon salt
1/2 cup heavy cream
1 cup milk chocolate chips
2 ounces white chocolate baking bar, chilled
fresh raspberry, optional garnish

Steps:

  • Preheat the oven to 325°. Arrange a rack in center of oven. Butter the bottom and sides of a 9 by 2 inch round cake pan and line the bottom with parchment paper.
  • In the top of a double boiler or in a heatproof bowl over barely simmering water, melt the semi-sweet chocolate chips and butter, stirring occasionally until smooth. Cool slightly.
  • Meanwhile, in a large bowl with an electric mixer fitted with the whip attachment, whip the eggs and salt on medium speed until doubled in volume, about 5 minutes. Gently fold the whipped eggs, a third at a time, into the melted chocolate. Pour the batter into the prepared cake pan. Prepare a water bath for the cake by placing the cake pan in a larger pan and filling the large pan halfway up the sides of the cake pan with hot, but not boiling water.
  • Bake for about 40 minutes, or until the cake pulls away from the sides of the pan and is set in the center. Remove the pan from the water bath to a cooling rack and cool the cake completely in the pan. Cover with plastic wrap and refrigerate overnight. To remove the cake from the pan, dip the pan in warm water halfway up the sides and run a thin metal spatula around the inside of the pan. Invert onto a plate to unmold and remove the parchment paper.
  • To prepare the ganache, bring the heavy cream to a simmer in a small saucepan over low heat. Pour the heated cream over the milk chocolate chips. Stir gently until smooth and allow to cool slightly. When the ganache is still warm to the touch, pour over the top of cake and spread with an offset spatula to evenly cover. There will be some ganache left over.
  • Chill the cake until the ganache sets, about 30 minutes. To garnish, grate the white chocolate bar on top of cake.

GHIRARDELLI DARK CHOCOLATE TRUFFLES RECIPE - (4.5/5)

Ghirardelli Dark Chocolate Truffles Recipe - (4.5/5) image

Provided by Treebs

Number Of Ingredients 5

1/3 cup heavy cream
6 tbsp unsalted butter, cut into small pieces
1 3/4 cups Ghirardelli 60% Cacao
Bittersweet Chocolate Chips
1/3 cup Ghirardelli Unsweetened Cocoa

Steps:

  • 1.) In a small saucepan, bring the cream to a simmer. Add the butter and stir until melted. Add the chocolate chips. Stir until completely melted and smooth. Remove from the heat and pour into a shallow bowl. 2.) Cool, cover, and refrigerate the mixture until firm, at least 2 hours. 3.) Using a melon baller or small spoon, roll mixture into 1" balls. Roll each ball in the cocoa or nuts. Enjoy immediately or refrigerate in an airtight container for up to 2 weeks.

Tips:

  • Use high-quality chocolate. This will make a big difference in the final flavor of your truffles.
  • Make sure your cream is cold before whipping it. This will help it whip up more easily and create a lighter, fluffier texture.
  • Don't overmix the ganache. Overmixing can make the ganache grainy.
  • Chill the ganache thoroughly before rolling it into balls. This will help the truffles hold their shape.
  • Be patient when coating the truffles in cocoa powder. It takes a little time to get them evenly coated.
  • Store the truffles in the refrigerator for up to 2 weeks.
