Tips:

  • For the perfect whoopie pie, make sure your ingredients are at room temperature before you start baking. This will help the ingredients blend together more easily and will result in a smoother batter.
  • Don't overmix the batter. Overmixing can make the whoopie pies tough and chewy. Mix just until the ingredients are combined.
  • Bake the whoopie pies until they are just set. The centers should be soft and slightly gooey. If you overbake them, they will be dry and crumbly.
  • Let the whoopie pies cool completely before frosting them. This will help the frosting to set properly.
  • For the best flavor, make the frosting ahead of time and let it chill for at least 30 minutes before using. This will allow the flavors to meld together.
  • When frosting the whoopie pies, use a piping bag or a zip-top bag with the corner snipped off. This will help you to get a smooth and even layer of frosting.
  • Store the whoopie pies in an airtight container at room temperature for up to 3 days. You can also freeze them for up to 2 months.

Conclusion:

Gingerbread whoopie pies with lemon molasses-swirled fluffy frosting are a sweet and festive treat perfect for the holidays. They're easy to make with simple ingredients and can be decorated to your liking. Whether you're looking for a fun baking project to do with the kids or a delicious dessert to serve at your next party, these whoopie pies are sure to be a hit.
