1 cup white sugar
5 large eggs
2 cups all-purpose flour
1 teaspoon ground ginger
1 teaspoon ground cinnamon

½ cup sour cream
1 cup water
½ cup white sugar
2 tablespoons cornstarch
⅓ cup lemon juice
1 tablespoon unsalted butter

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 12-cup fluted tube pan (such as Bundt®) well.
  • Beat butter in a mixing bowl on medium speed until soft and creamy, about 2 minutes; gradually add 1 cup white sugar, beating at medium speed for 5 to 7 minutes. Add eggs one at a time, beating just until yellow disappears; batter may look a bit curdled.

1/2 cup applesauce or 1/2 cup canned pumpkin puree
1 egg
2 tablespoons unsulphured molasses
1/3 cup golden syrup or 1/3 cup honey
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 cup all-purpose flour
1/4 cup instant malted milk powder
2 tablespoons crystallized ginger

Steps:

  • Preheat the oven to 350°F Grease a loaf tin with a little vegetable oil and line with baking paper.
  • In a large saucepan over a medium heat, gently stir the butter, sugar, syrup and black treacle together until the butter is melted.
  • Remove from the heat and stir in the cloves, cinnamon, ginger and bicarbonate of soda. Beat in the egg and pumpkin purée, then the malted milk powder, and finally stir in the flour. Pour the batter into the prepared tin and bake for 10 minutes.

1/2 cup shortening
1/3 cup sugar
2/3 cup molasses
2 large eggs
1 3/4 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon baking soda
1 1/2 teaspoons ginger
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2/3 cup sour milk (add 3 1/2 teaspoons vinegar to whole milk)

Steps:
