1 large sweet potato, cut into 1-inch pieces
1 medium onion, cut into wedges

Steps:

  • Heat 1 cup stock, fruit, brown sugar, garlic powder and rosemary in a 2-quart saucepan over medium heat to a boil.
  • Place the chicken, potato and onion into a roasting pan. Pour the stock mixture over all. Cover the pan.
  • Bake at 450 degrees F for 15 minutes. Pour the remaining stock into the pan. Bake, uncovered, for 15 minutes or until the chicken is cooked through and the vegetables are tender.

1 large parsnip, peeled, trimmed, cut into 1/2-inch pieces (about 1 1/2 cups)

2 teaspoons chopped fresh thyme plus sprigs for garnish
4 6- to 8-ounce skinless boneless chicken breast halves, pounded to 1/2-inch thickness
1 cup dry Sherry
2 tablespoons butter

Steps:

  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add parsnip; sauté until beginning to brown, about 2 minutes. Add apple and chopped thyme; cook until parsnip and apple are tender, about 6 minutes. Transfer parsnip mixture to plate.

1/3 cup chicken broth
