2 ounces unsweetened chocolate, chopped
2 large eggs
1 cup sugar
1/2 cup all-purpose flour
FILLING:
3 tablespoons butter, softened
1-1/2 cups confectioners' sugar
2 tablespoons 2% milk
3/4 teaspoon peppermint extract
3 to 4 drops green food coloring, optional
GLAZE:
1/2 cup semisweet chocolate chips
2 tablespoons butter

Steps:

  • Preheat oven to 350°. In a microwave-safe bowl, microwave butter and chocolate on high until butter is melted; stir until smooth. Whisk in sugar until blended. Whisk in vanilla and eggs, one at a time. Stir in flour. , Pour into a greased 9-in. square baking pan. Bake until a toothpick inserted in center comes out clean, 20-25 minutes (do not overbake). Cool in pan on a wire rack., Beat filling ingredients until blended; spread over brownies. For glaze, in a microwave, melt chocolate chips and butter; stir until smooth. Spread over filling. I've been looking for this recipe. It is one of my favorite brownie recipes. The brownies are frosted with a mint frosting and then another layer of unsweetened chocolate goes on top that hardens. The sweetness and the bitterness make a very interesting combination.

1/2 cup butter, softened
1 cup sugar
1/2 cup chopped walnuts
1/2 cup flour
1 tsp vanilla
2 eggs
2 squares unsweetened chocolate, melted and cooled
mint frosting (recipe follows)
chocolate glaze (recipe follows)
MINT FROSTING
1 cup confectioner's sugar
2 tbs butter
1 tbs milk
1/2 tsp peppermint extract
CHOCOLATE GLAZE
2 tbs butter
2 sqares unsweetened chocolate

Steps:

  • 1. Beat butter, sugar, vanilla, eggs, and 2 squares of melted chocolate together.
  • 2. Stir in nuts and flour.
  • 3. Spread in 8 x 8 x 2 inch pan and bake at 350 degrees for 25 minutes.
  • 4. Cool.
  • 5. Prepare mint frosting by mixing 1 cup of confectioner's sugar, 2 tbs softened butter, 1 tbs milk, and the peppermint extract.
  • 6. When brownies are completely cool, spread on the mint frosting. Let stand until set
  • 7. For the chocolate glaze, melt 2 tbs butter. Add 2 squares of unsweetened chocolate and stir until all is melted. Pour the chocolate glaze over the brownies and chill until firm.
