10 boneless skinless chicken thighs
3/4 cup ground oats (use coffee grinder)
1/4 cup parmesan cheese
1/2 teaspoon paprika
1/4 teaspoon oregano
1/4 teaspoon onion powder
1/4 teaspoon thyme
1/4 teaspoon ground black pepper
1/2 teaspoon salt
1 egg
1/4 cup milk

Steps:

  • combine all dry ingredients into a large bowl.
  • whisk milk and egg into a separate bowl.
  • dip each chicken thigh in the milk mixture and then into the dry mixture.
  • place on a lightly greased baking sheet.
  • place in oven at 350 F for 30 minutes.

Steps:

  • Heat oven to 400°F. Melt butter in 13x9-inch baking dish in oven.

4 chicken quarters (or any other cut up chicken)
1/4 cup mayonnaise
1 tablespoon cayenne pepper (optional)
3/4 cup Chex cereal (Rice or Corn)

Steps:

  • Quantities are approximate, adjust accordingly. Rinse chicken and place in single layer in shallow pan. Coat with light layer of mayo. Sprinkle cayenne pepper (it's VERY strong, so don't use too much) over the mayo. Spice Variations: sprinkle garlic powder, salt, pepper, onion powder, or paprika, etc.
  • Crush Chex cereal (either in a ziploc bag, a bowl, or in your hand) and spread over the chicken, be sure to cover most of the mayo.

1 teaspoon ground paprika
1 teaspoon sea salt
1 teaspoon ground black pepper
