GLUTEN-FREE ALL-PURPOSE FLOUR MIX #1

Gluten-Free All-Purpose Flour Mix #1 image

This mix will make an all-purpose gluten-free blended flour. Add xanthan gum, guar gum, baking powder etc as required. Using a blended flour that you have prepared yourself is much cheaper than buying ready blended multi-purpose flour. If you shop at asian supermarkets, bulk or wholesale stores you will be able to locate all of these flours quite cheaply. The flours used in this mix are readily available in most countries and are the standard flours used in gluten-free cooking. Look for a very fine milled rice flour as the grittier flours will also produce gritty baked goods.Keep on hand to use in your recipes. Store in an airtight container. You can make larger amounts to have on hand eg. 6 cups rice flour, 2 cups potato starch & 1 cup arrowroot or tapioca flour. The potato starch/flour that you are looking for is a fine white powder (not the US potato flour). The general recommended amounts of xanthan gum are 1/2 to 1 teaspoon for a cake, 1 teaspoon for a pastry recipe and 1 tablespoon for a bread recipe. Add the gum to your dry ingredients and mix well, prior to adding liquids. This is a general purpose flour blend. You can also replace 1 cup of rice flour with 1 cup of brown rice flour. Editted to add - Yes..this recipe uses potato starch. In Australia we cannot purchase potato flour as is available in the US. Potato starch is sold as both potato flour and potato starch in Australia

NEARLY NORMAL GLUTEN-FREE FLOUR MIX

Nearly Normal Gluten-Free Flour Mix image

I found this recipe in the Thanksgiving edition of the Illinois Times, when Kim O'Donnel 'caught up' with the author of 'Normal Cooking for Gluten-Free Eating. After having success with many of the gluten-free all-purpose flower mixes from the 'zaar, I can't wait to try this one and hope it helps others. On a seperate note, The columnist does say the products using this flour are grittier than gluten-containing flours; I think that is typical of gluten-free baking. Nonetheless, enjoy!

WICKLEWOOD'S GLUTEN FREE FLOUR MIX

Wicklewood's Gluten Free Flour Mix image

It seems obvious I know but lighter flours are better for lighter recipes, and I am a firm believer in less is more; gluten free flour doesn't need to be complicated, the only rule of thumb with this flour blend is to use 2 teaspoons of xanthan gum for every lb. of flour.

Tips:

  • Always check the labels: Ensure that the products you're buying are labeled "gluten-free" to avoid any potential cross-contamination.
  • Experiment with different blends: Various gluten-free flour mix brands and recipes are available, so try out different options to find the one that best suits your taste and texture preferences.
  • Start with small substitutions: When substituting gluten-free flour mix in your favorite recipes, begin by replacing a small portion of the all-purpose flour (e.g., 25% or 50%). Gradually increase the amount of gluten-free flour mix as you get more comfortable with the results.
  • Adjust the liquid content: Gluten-free flour blends tend to absorb more liquid than all-purpose flour. Add liquids gradually and adjust the amount as needed to achieve the desired consistency in your recipes.
  • Consider adding xanthan gum or psyllium husk: These ingredients can help improve the texture and elasticity of gluten-free baked goods, particularly in yeast-based recipes.
  • Don't overmix: Overmixing can result in tough and dense baked goods. Mix your ingredients just until combined to prevent this issue.
  • Be patient: Perfecting gluten-free baking takes time and practice. Don't be discouraged if your first few attempts don't turn out perfectly. Keep experimenting and learning until you find your groove.

Conclusion:

Embracing gluten-free baking opens up a world of culinary possibilities for those with celiac disease or gluten sensitivities. By using gluten-free flour mixes and following these tips, you can create delicious and satisfying baked goods that cater to your dietary needs. Remember to experiment, adjust recipes as needed, and enjoy the process of creating delectable gluten-free treats. Happy baking!
