Time 1h5m

Number Of Ingredients 15

1 pkg gluten-free rotelli pasta
1 pkg grape tomatoes, halved, 10 oz
4 oz Feta cheese, crumbled
1/4 lb deli salami, cubed
bunch fresh basil, chopped
1/2 red pepper, chopped
1 bunch green onions, chopped
1 can(s) black olives, halved, 6 oz
DRESSING
1/3 c olive oil
3 Tbsp lemon juice
2 clove garlic, minced
1 1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp fresh ground black pepper

Steps:

  • 1. Boil gluten-free pasta according to package directions and drain.
  • 2. In a large mixing bowl, place cooled pasta, halved tomatoes, Feta cheese, salami, chopped basil, chopped bell pepper, and halved black olives.
  • 3. Toss together.
  • 4. Add chopped green onions and toss.
  • 5. In a small bowl, whisk together dressing ingredients.
  • 6. Pour over pasta salad and toss together well. You can add artichoke hearts if desired too.

Tips:

  • Use high-quality gluten-free pasta: Look for brands that use brown rice, quinoa, or chickpea flour, as these provide a better texture and flavor than white rice-based pastas.
  • Cook the pasta al dente: This means cooking it for a shorter amount of time so that it retains a slight bite. This will help prevent the pasta from becoming mushy in the salad.
  • Rinse the pasta with cold water after cooking: This will help to stop the cooking process and prevent the pasta from sticking together.
  • Use a variety of vegetables: The more colorful and varied the vegetables in your salad, the more nutritious and delicious it will be. Try using a mix of roasted, grilled, and raw vegetables.
  • Add some protein: Grilled chicken, shrimp, or tofu are all great additions to a gluten-free pasta salad. You could also use beans or lentils for a vegetarian or vegan option.
  • Use a light and flavorful dressing: A simple vinaigrette or pesto is a great way to dress a gluten-free pasta salad. Avoid using heavy or creamy dressings, as these can overwhelm the other flavors in the salad.
  • Serve the salad chilled: Gluten-free pasta salad is best served chilled, so make sure to refrigerate it for at least 30 minutes before serving.

Conclusion:

Gluten-free pasta salad is a delicious and easy-to-make dish that is perfect for summer gatherings or potlucks. With so many different variations, there is sure to be a gluten-free pasta salad recipe that everyone will enjoy.
