1 cup rice flour
1/2 cup tapioca flour
1/4 cup potato starch
1/4 teaspoon salt
2 teaspoons xanthan gum
4 ounces margarine (see below***)
1 large egg, beaten (or use 1/4 cup extra ice water if allergic to eggs)
1 teaspoon apple cider vinegar (or water if you can't use vinegar)
3 tablespoons ice cold water

Steps:

  • *Mix flours, salt, and xanthan gum in a bowl. Rub in the margarine,but not too much. The mixture should resemble baked beans rather than breadcrumbs.
  • *In a separate bowl, whisk together the egg, vinegar and ice water.
  • Slowly stir the egg mix into the flour mix, until a ball is formed.
  • *Knead the pastry (with a little gf flour if needed) for 2-3 minutes.
  • Wrap the pastry and place in the fridge for at least an hour. **It can be frozen at this stage.
  • *If the pastry is a little hard when removed from the fridge, knead again a little bit.
  • *Roll out on a floured surface. Place in pie pan and follow baking instructions for your pie recipe.
  • *If cooked pastry is needed for your recipe the pastry can be cooked at 425 degrees for 10-12 minutes.
  • ***substitute Spectrum Naturals Organic Shortening to make it soy free. This is a non-hydrogenated, trans fat free vegetable shortening made from palm oil.

GLUTEN FREE POTATO SHORTCRUST PASTRY

Unlike some other gluten free dough, this pastry rolls out quite well and is excellent for pies and even for things such as sausage rolls. I have used it to make gf Christmas mince pies with the addition of a little sugar. Cooking time is chilling time. It is important that the mashed potato be prepared well in advance and chilled (uncovered) for several hours beforehand. Please also ensure you weigh ingredients with an accurate kitchen scale as correct ratios are important. In response to a review, I have not tried substituting tapioca flour however in this instance think it may be too gluey.

75 g rice flour
50 g cornflour
1/2 teaspoon salt
1/2 teaspoon xanthan gum
1 teaspoon baking powder
100 g butter or 100 g margarine, well chilled and cubed
200 g well chilled cooked cooled mashed potatoes

Steps:

  • Place the rice flour, cornflour, salt, Xanthan Gum and Baking powder in a large mixing bowl and mix thoroughly. It is advantageous to use an electric whisk or food processor to get a really good mix.
  • Rub the butter or margarine into the flour with your fingertips until it resembles breadcrumbs.
  • Add the mashed potato and mix until just combined. DO NOT ADD ANY FURTHER LIQUID. Briefly work the dough , shape into a ball, wrap in clingfilm and refrigerate for 30 minutes.
  • Remove the pastry from the refrigerator and knead by hand for approximately 2 minutes until smooth. Refrigerate again (uncovered) for 1 hour.
  • Remove from refrigerator and roll out on a floured surface as required.

SWEET POTATO PASTRY CRUST (VEGAN / GLUTEN FREE)

This is a recipe I've modified from www.piginthekitchen.co.uk. If you do not need it to be gluten free then you can also make this recipe using regular pastry flour and no xanthan gum which I've also done and it turned out great. I've used it as a crust for apple pie and shoo fly pie. NOTE: this crust is slightly chewier than a regular pastry crust made with butter, if you want it to crisp up perhaps try brushing the edges with a non dairy spread.

1 large sweet potato
1 cup rice flour (plus a few Tbsp more for kneading or rolling)
1 teaspoon xanthan gum
1 teaspoon baking powder
1 teaspoon salt

Steps:

  • Cook the sweet potato by steaming or boiling, then mash it until smooth (discard skin). Put it in a bowl and refrigerate at least 2 hours before starting the pie.
  • Put the rice flour, xanthan gum and baking powder into a large mixing bowl and stir them all together.
  • Take the sweet potato out of the fridge and add the dry ingredients into the mash.
  • Sprinkle the counter with a few tablespoons of rice flour and knead the dough until it's no longer sticky.
  • Press the dough into a ball and then cover and refrigerate for another 30 minutes (I skip this step if I need to make the pie immediately).
  • Take the dough out of the fridge and roll it out on a floured surface, then press it into your greased pie pan. (I sometimes need a spatula to help pick it all up at once, it's more fragile than regular pastry dough and may need a little help being transferred from the counter to the pan).
  • Bake the shell right away or fill it first with the fruit or pie ingredients of your choice. Baking time depends on the kind of pie but it's usually around 40 minutes.

A lady that I work with who is an excellent pie baker said that this crust was very good. She had no idea that it was gluten free. I use recipe #289608 for my flour mix. Makes a two crust pie or two single pie crusts. Cook time is for a baked pie shell. Refrigeration time not included.

2 1/4 cups gluten-free flour (plus additional flour for rolling)
1 teaspoon xanthan gum, rounded
1/2 teaspoon salt
3/4 cup shortening
1 tablespoon vinegar
1 large egg, beaten
4 tablespoons ice water

Steps:

  • In a mediuim bowl, blend all of the dry ingredients until well blended.
  • Cut in the shortening until coarse crumbs form.
  • In a small bowl, beat the vinegar and egg together with a fork.
  • Add the ice water and combine.
  • Stir the wet ingredients into the dry ingredients with a fork and keep blending until the door forms a ball.
  • Work a little with your hands to obtain a smooth texture.
  • Cover and refrigerate for 30 minutes or more before rolling out.
  • Divide the dough in half and roll out on waxed paper or plastic wrap dusted with flour.
  • Roll out to a 11" circle, using as much flour as needed to prevent sticking.
  • Place the dough in a 9" pie plate.
  • Repeat with second piece of dough and cut steam vents in top if making a two crust pie.
  • Fill with filling, and place second piece of pastry on top, adjust to fit.
  • Roll under and crimp pastry.
  • Bake as directed for filling used.
  • For a baked single crust, prick the pastry with a fork on sides and bottom.
  • Bake the crust in a pre-heated 450 degree oven for 10-12 minutes or until slightly browned.
  • Cool before filling.

I worked with many different combinations of flours before settling on this one. I love the flavor of the oat flour, but it is so fine that when I tried using all oat flour the pastry crumbled much too easily. So I combined it with corn flour, which is finely ground cornmeal; Bob's Red Mill produces the version I used. Millet flour will also work, but it has a chalkier flavor. The almond flour absorbs moisture and helps hold the dough together. The dough will crack if you roll it out cold, so I roll it between pieces of plastic before I chill it. Then I remove it from the refrigerator and let it soften just enough so that I can line the tart pans without it cracking.

160 grams (approximately 1 1/4 cups) corn flour or finely ground cornmeal
150 grams (approximately 1 1/3 cups) oat flour (make sure it is from a gluten-free facility)
168 grams (6 ounces) butter, preferably French style Plugrà
4 grams (1/2 teaspoon) fine sea salt
50 grams (approximately 1/4 rounded cup) sugar
40 grams (approximately 1/3 rounded cup) almond flour
9 grams (approximately 2 teaspoons) vanilla extract
63 grams egg (approximately 1 extra large plus 2 teaspoons), beaten

Steps:

  • Sift together the corn flour and the oat flour. In a stand mixer fitted with the paddle attachment, or in a bowl with a rubber spatula, cream the butter and salt on medium speed for about 1 minute, taking care not to whip. Scrape down the sides of the bowl and the paddle with a rubber spatula and add the sugar. Combine with the butter at low speed. Scrape down the sides of the bowl and the paddle.
  • Add the almond flour and vanilla extract and combine at low speed.
  • Gradually add the egg and one fourth of the flour mixture. Beat at low speed until just incorporated. Stop the machine and scrape down the bowl and the paddle.
  • Gradually add the remaining flour and mix just until the dough comes together.
  • Scrape the dough out of the bowl, weigh it and divide it into 2 equal pieces. Place each piece between sheets of plastic wrap and gently roll out to a 10-1/2 inch circle. Place on a sheet pan and refrigerate for 1 hour or (preferably) longer.
  • Very lightly butter a 9-inch tart pan or pie dish (depending on the recipe you'll be using this for). You should not be able to see the butter. Remove one sheet of dough from the refrigerator, and if it is very stiff set it out for about 5 minutes, until it's pliable. Ease the dough into 9-inch tart pan or pie dish. If the dough cracks, just pinch the cracked edges together. You do not have to worry with gluten-free dough about over working and stiffening the pastry, but try not to press the dough thinner in some places than in others.

Cool before filling.
