Oh My Gosh Muffins image

These muffins are delicious -- they are my uncle's recipe. Since I was born until I was ten or eleven I would have one of these muffins with breakfast every morning. They have just the perfect amount of everything, light and sweet. Then I learned to bake them myself and have been ever since. It's also a good way to use up bananas that are somewhat past their best days.

Tips:

  • Use ripe bananas. The riper the bananas, the sweeter and more flavorful your muffins will be.
  • Mash the bananas well. This will help to incorporate them evenly into the batter and prevent them from clumping together.
  • Don't overmix the batter. Overmixing can toughen the muffins.
  • Fill the muffin tins only 2/3 full. This will allow the muffins to rise properly.
  • Bake the muffins until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

Go-Go muffins are a delicious and easy-to-make treat that are perfect for breakfast, lunch, or a snack.
