  • Preheat the oven to 425 degrees F. On a floured work surface, roll the puff pastry into a 12-inch square, about 1/8 inch thick. Invert a 10-inch ovenproof nonstick skillet over the pastry. About 10 Granny Smith apples
6 tablespoons butter
1/4 cup sugar, plus 1 tablespoon for sprinkling
1 teaspoon vanilla extract
1/2 teaspoon salt
1 lemon
1 teaspoon salt
1/4 cup sugar
Scant 1/4 cup ice water
1 egg yolk
1 3/4 cups all-purpose flour
1 cup plus 2 tablespoons butter, cut in 1/2-inch chunks, chilled

Steps:

  • Preheat the oven to 375 degrees F.
  • Dust a clean surface lightly with flour and roll out the round of chilled dough -- giving the dough a quarter turn every few strokes and occasionally lifting it to dust underneath with additional flour -- to a roughly 11-inch circle. Steps:

  • Place a rack in middle of oven; preheat to 350°F. Toast almonds on a rimmed baking sheet, tossing once, until golden brown, 6-8 minutes. Let cool.
  • Reduce oven temperature to 275°F. Peel apples; cut in half. Using a melon baller or teaspoon, scoop out cores.
