1 (3 to 4-pound) boneless leg of lamb
Salt and pepper
1 tablespoon chopped fresh thyme leaves
1 tablespoon chopped fresh rosemary leaves
5 tablespoons extra-virgin olive oil
2 tablespoons Italian bread crumbs
1/3 cup white wine
1/3 cup water or chicken broth
Special Equipment: kitchen string, meat thermometer

Steps:

  • Preheat the oven to 450 degrees F.
  • Season the meat with salt and pepper. In a small bowl, mix the herbs with the olive oil and bread crumbs. Rub both sides of the lamb with the herb mixture. Using the kitchen string, tie up the lamb leg at 2-inch intervals. Place in roasting pan and bake for 20 minutes. Lower the oven temperature to 375 degrees F. Add the wine and water or broth to the roasting pan and cook for another 30 to 40 minutes, or until the thickest part of the lamb reaches an internal temperature of 140 degrees F for medium. Take the lamb out of the oven, cover loosely with foil, and let the meat rest for 15 minutes. Slice and serve.

1 1/2 tablespoons sumac
1 1/2 tablespoons dried oregano
2 cups panko breadcrumbs, flakes (Japanese breadcrumbs, regular are fine but you will use less.)
1/4 cup flour
1 large egg, mixed with
1 tablespoon water
1/4 cup olive oil

Steps:

  • Combine sumac, oregano and flakes in a shallow bowl or a plate.
  • Beat egg with water in another bowl.
  • Place flour in shallow bowl or plate.
  • Coat each fillet in flour, then dip into egg mixture and finally coat in spice mixture.
  • Heat oil in a large frying pan and cook lamb until browned on both sides and cooked as desired.
  • Leave to stand 5 Min's, then slice thickly.

2 ½ lb rack of lamb, frenched
salt, to taste
pepper, to taste
5 tablespoons olive oil, divided
8 cloves garlic, peeled and smashed
¾ cup breadcrumb
¼ cup fresh flat-leaf parsley
1 ½ tablespoons fresh rosemary
½ cup grated parmesan cheese
1 ½ tablespoons whole grain dijon mustard

Steps:

  • Preheat oven to 400°F (200°C).
  • Season lamb generously with salt and pepper.
  • Heat a cast iron over medium high heat.
  • To the hot pan, add in 4 tablespoons of the the olive oil, along with the lamb and garlic. Sear all sides of the lamb until browned, about 3-4 minutes. Remove browned lamb, and place cooked lamb onto a baking sheet.
  • Remove garlic and add to food processor with along with the breadcrumbs, parsley, parmesan, rosemary, and 1 tablespoon of olive oil. Pulse until combined. Pour onto a large plate.
  • Brush the top and sides of the lamb with mustard.
  • Coat the top and sides of the lamb with the breadcrumb mixture and roast in oven for 20-25 minutes.
  • Allow to rest before slicing.

1 ½ cups shredded Gruyere cheese
⅔ cup dry bread crumbs
3 tablespoons salted butter, melted
3 tablespoons chopped fresh parsley
½ medium lemon, zested and juiced
2 cloves garlic, minced
4 (8 ounce) fillets sockeye salmon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a baking sheet lightly with cooking spray.

2 ¼kg leg of lamb
3 small garlic cloves , sliced
2 onions , cut into chunks
1 carrot , cut into chunks
2 tbsp Dijon mustard
175g white breadcrumb (a few days old is best)
small bunch parsley , finely chopped
small bunch mint , finely chopped
5 rosemary sprigs, leaves finely chopped
2 fat garlic cloves , crushed
3 ½ tbsp olive oil
2 tbsp plain flour
400ml red wine
1l lamb or beef stock
1-2 tsp Dijon mustard
knob of butter

Steps:

  • Heat oven to 220C/200C fan/gas 7. Use a sharp knife to make little slits all over the lamb, then insert a slice of garlic into each hole. Tip the onions and carrot into a large flameproof roasting tin, then place the lamb on top and season. Pour 250ml water into the base of the tin and roast in the oven for 30 mins.
  • Meanwhile, make the crust by mixing together all the ingredients and seasoning well. Remove the lamb from the oven and turn the heat down to 190C/170C fan/gas 5. Brush the lamb all over with the mustard, then pack on the crust in a thick layer - don't worry if any falls in the tin, this will be used in the gravy later (you probably won't use the entire crust, so set aside what's left for later). Return the lamb to the oven and cook for a further 1 hr 30 mins. Check the lamb during cooking and add more water to the base of the tin if it dries out.
  • Remove the lamb from the tin, cover lightly with foil and leave to rest for 30-40 mins - if covered too tightly, the crust will go soggy.
  • To make the gravy, put the roasting tin with the vegetables still in it directly on the heat and whisk in the flour. Cook for 1 min, then add the wine, scraping any flour from the bottom of the tin. Let it bubble for 1 min, then pour in the stock. Bring to the boil, then simmer gently for 10-15 mins until thickened, stirring in a little of the reserved crust for a thicker gravy. Strain the gravy through a sieve into a pan, discarding the vegetables left in the sieve. Add mustard to taste and stir through the butter. Keep warm until ready to serve.

4 lamb cutlets , 350g/12oz total weight
2 tbsp demerara sugar
1 rounded tbsp Dijon or English mustard
drizzle of olive oil
1 medium baking potato , no need to peel
leaves from a sprig of rosemary

  • Preheat the grill to high. Meanwhile, season the lamb with salt and pepper. Sprinkle the sugar on a plate. Spread the cutlets with mustard, scatter with rosemary leaves, then roll in the sugar.
  • Drizzle a little oil over a non-stick baking sheet or tray. Slice the potato as thinly as you can, pat dry on a paper towel, then scatter slices over the baking sheet in a single layer. This works best with filet steak, however I have also made it with thick cut sirloin & it was yummy. It's nice as a special treat or dinner. I think this is an Annabel Langbein (NZ Chef) recipe but with a definite French influence.

2 tablespoons salted butter, melted
2 garlic cloves, crushed
2 tablespoons fresh thyme, chopped
2 slices white bread, fresh (I use the equivalent by chopping up a french stick)
1 tablespoon olive oil
2 (200 -250 g) beef steak fillets
fresh ground black pepper
Dijon mustard

Steps:

  • Heat the oven to 220 degrees Celsius.
  • Pulse the bread in a food processor until the crumbs are coarse (you don't want them really fine).
  • Put the melted butter into a small bowl, and add the garlic, thyme and fresh breadcrumbs. Stir until well combined.
  • Heat a frypan onto high heat & add the olive oil. The pan should be smoking.
  • While the pan is heating, trim any excess fat and silverskin from the steaks, and grind black pepper to taste over the steaks.
  • Using tongs (and watch for spatters) put the steaks into the pan and quickly sear on all sides.
  • Remove to an oven tray and spread with Dijon Mustard to taste.
  • Pile the crumb mixture on top in an even layer, and put into the oven until cooked to your liking (I like this rare, so about 15 minutes or so at most for me is fine). Ensure that the crumb doesn't burn (but it should be golden).
  • Rest for 5-10 minutes in a warm place.
  • Serve with fresh greens & potatoes.
