1 (12 ounce) package extra firm tofu, drained and pressed
1 cup self-rising flour
2 tablespoons cornstarch
1 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons vegetable oil, or as needed

Steps:

  • Drain tofu, place on a plate, and stack heavy plates on top of it to drain any extra moisture, at least 15 minutes. Slice into 24 bite-size pieces.
  • Combine flour, cornstarch, salt, and pepper in a gallon-size resealable plastic bag. Toss tofu into bag, seal completely, and shake to coat. Transfer tofu pieces to a plate, shaking off any excess flour.
  • Pour vegetable oil into a skillet; heat on medium-high until just smoking. Cook tofu, turning often, until golden brown on all sides, about 5 minutes per side.

Fast, easy and tasty. Goes well with Thai curry. The only tofu that my BF (serious carnivore) will eat! Prep time is mainly the time that the tofu is draining.

BUFFALO TOFU BITES

Buffalo Tofu Bites image

This is another recipe I adapted to be vegan from the Healthy Cooking Class I took over Winter Break. Original recipe used chicken tenders. I really like this recipe because of all the whole grains and seeds that were incorperated into the breading mixture, and the fact that they were baked instead of fried. The chef who created the recipe did not use exact mesurements, so the dry spices that are added to the breading mixture are my own measurements and are all marked "to taste". The chef was also a big fan of the Kashi brand whole grain crackers, but those are NOT vegan. I substituted Wasa wholegrain crackers instead.
