2 packages (1/4 ounce each) active dry yeast
1-1/4 cups warm water (110° to 115°)
1/4 cup canola oil
1/4 cup sugar
1 teaspoon salt
2 eggs
2 to 3 drops yellow food coloring
4-1/2 to 5 cups all-purpose flour
1 egg yolk
1 tablespoon cold water
1 tablespoon sesame seeds

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the oil, sugar, salt, eggs, food coloring and 3 cups flour. Beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky). , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. 1 1/2 cups hot milk
1/4 cup sugar
1 tablespoon salt
1/2 cup butter
5 teaspoons active dry yeast
1/2 cup warm water
2 eggs
6 1/2 cups flour
1 egg
2 tablespoons butter
2 tablespoons sesame seeds or 2 tablespoons poppy seeds

Steps:

  • Into hot milk, stir sugar, salt, and 1/2 cup butter.
  • Cool to lukewarm.
  • Sprinkle yeast over warm water in bowl.
  • Stir to dissolve.
  • Stir in lukewarm milk mixture.
  • Add 2 eggs and 3 cups flour and beat at high speed for 2 minutes.

  • Brush with rest of egg mixture and put sesame or poppy seeds on top.

3 3/4 cups unbleached all-purpose flour or 3 3/4 cups european-style artisan bread flour
2 teaspoons instant yeast

1 cup water (plus 2 - 4 tablespoons water)
3 tablespoons toasted sesame seeds or 3 tablespoons whole flax seeds, golden preferred
1 beaten egg white

  • Mix and knead all of the dough ingredients by hand, mixer, bread machine or food processor until you've made a smooth, elastic dough. Place the dough in a lightly greased bowl, turn to coat, cover, and allow it to rise for 1 1/2 to 2 hours.
