3 quarts water
1 tablespoon cornstarch
1 cup low-fat buttermilk
2 tablespoons sweet Gorgonzola
Large dash ground nutmeg
8 ounces fresh angel-hair pasta
1/2 cup fresh or frozen peas
2 tablespoons toasted, chopped walnuts
2 tablespoons freshly grated parmigiano reggiano

Steps:

  • Bring 3 quarts of water to boil in covered pot for pasta.
  • Mix cornstarch with a tablespoon of buttermilk to make smooth paste. In heavy-bottomed saucepan, combine buttermilk-cornstarch mixture, remaining buttermilk, Gorgonzola and nutmeg.
  • Cook over medium heat, stirring almost constantly, to melt cheese and thicken mixture.
  • When water boils, stir in pasta and cook according to package directions, about 45 seconds; drain.
  • Just as buttermilk mixture begins to thicken, stir in peas and cook just long enough to heat through.
  • Stir in walnuts and serve over pasta with Parmesan cheese on the side.

1 1/2 cups Chardonnay wine
1 (8 ounce) package light cream cheese, softened
pepper
1 pinch nutmeg
1 lb rotelle pasta or 1 lb linguine
2 tablespoons parmesan cheese
1/2-3/4 lb gorgonzola or 1/2-3/4 lb other blue cheese, crumbled
2 tablespoons chopped fresh parsley

Steps:

  • Heat wine to boiling, cook until reduced by half; Whisk in cream cheese until smooth, heat to boiling.
  • Reduce heat to low and simmer uncovered, stirring frequently, until thickened, about 15 minutes; Stir in seasonings.

1 * 1 lb. filet mignon, cut into 2 inch medallions
3 * 3 tablespoons balsamic vinegar
1 * 1 teaspoon brown sugar
1/2 * 1/2 teaspoon salt
1/4 * 1/4 teaspoon coarsely ground black pepper
2 * 2 teaspoons olive oil
2 * 2 teaspoons butter
3/4 * 3/4 cup half-and-half
1/4 * 1/4 cup chicken broth
1/4 * 1/4 cup dry white wine
1/4 * 1/4 cup crumbled Gorgonzola cheese, plus extra for garnish
1 * 1 tablespoon freshly grated Parmesan cheese
1/4 * 1/4 teaspoon salt
1/8 * 1/8 teaspoon black pepper
8 * 8 ounces uncooked pasta, linquine or fettuccini

Steps:

  • Toss the filet mignon medallions with the balsamic vinegar, brown sugar, salt, and pepper. Let rest in the refrigerator for 20 minutes. Meanwhile, prepare a pot of water to boil and cook pasta according to package directions. Drain and set aside. In a saute pan, heat the oil over medium heat. Add the beef. Cook without turning for 2-3 minutes, or until browned. Turn and repeat. Remove from heat and cover to keep warm. (If you would like the meat more well done, cook for additional time) Combine the butter through white wine in a saucepan. Bring to a slow simmer and stir in the Parmesan and Gorgonzola. Season to taste with salt and pepper. Let simmer for 2 minutes, stirring to ensure the cheese has dispersed evenly. Toss the pasta with the sauce and filet mignon medallions. Garnish with additional Gorgonzola. Note: just before serving, I threw the asparagus into the pan I cooked the beef in. Sauteed it for a minute, poured a few glugs of white wine, and put the lid on it. After steaming it for a minute or two I seasoned with salt and pepper to taste. Serve it drizzled with some of the pan drippings you cooked it in.

2 chicken breast halves, cooked and cubed ( i use store bought rotisserie chicken)
8 oz bow-tie pasta, uncooked
1/2 lb fresh asparagus
3 green onions
1/4 c fresh parsley
1 clove garlic, minced
4 oz gorgonzola cheese, crumbled (1 tub)
4 oz monterey jack cheese or colby/ jack
1/3 c parmesan cheese, shredded or shavings for garnish
1/2 c heavy cream
2 Tbsp olive oil
1/2 tsp cracked black pepper

Steps:

  • 1. Clean and snap asparagus where tender, then cut into 1" diagonal pieces. Clean and slice green onions. Mince garlic and chop 1/4 cup of parsley. Reserve a few springs of parsley for garnish.
  • 2. Cook pasta as directed. Add sliced asparagus into boiling pasta the last 5 minutes of pasta cooking time.
  • 3. Meanwhile, in a large skillet; heat olive oil. Cook onions, garlic and parsley on med-high heat for about 5 minutes or until onions are tender. Add chicken and stir. Add heavy cream and bring to a slow boil. Add jack cheese and gorgonzola cheese. Stir while melting cheese. Reduce heat to medium-low heat, simmer for 3-5 minutes.
  • 4. Drain pasta and asparagus. Pour into gorgonzola cheese sauce, half of the pasta at a time. After first half, add as much of the remaining pasta to the sauce to accommodate your liking.
  • 5. Add cracked pepper and parmesan shavings and a spring of parsley for garnish. Serve with a side salad and crusty garlic bread. Pairs well with a Chardonnay or Pinot Noir. Enjoy!

18 oz Paccheri pasta or large rigatoni
8 oz gorgonzola cheese
4 oz pancetta
1 c peas, frozen petite
1 c heavy cream
3 Tbsp parsley
4 Tbsp Parmigiano-Reggiano, grated
2/3 tsp coarse sea salt
2/3 tsp black pepper

Steps:

  • 1. Bring a large pot of water, 4 to 5 quarts, to a rapid boil. Add a Tbsp. of sea salt. Toss in the Paccheri or large rigatoni pasta and cook according to instructions. Al Dente is preferred so remove before pasta is fully cooked.
  • 2. In a large sauté pan add 1 tbs of extra virgin olive oil and 4 oz. of cubed pancetta. Cook at medium temperature until fat has been rendered out of pancetta and is crispy. With a slotted spoon take Pancetta out and set aside.
  • 3. In the sauté pan add the cream, gorgonzola, Parmesan, salt, pepper, and parsley. Whisk rapidly until the cheeses melt and the sauce comes together.
  • 4. Once pasta is cooked and still al dente toss directly into large sauté pan add peas and pancetta. Garnish with parsley or additional Parmesan cheese.

8 oz pasta of choice i used small shells
1 Tbsp butter
1 Tbsp flour
1 c heavy cream
1/2 c each vegetable stock and dry white wine
4 oz crumbled gorgonzola cheese
3 Tbsp fresh parsley chopped
1/2 tsp each nutmeg and black pepper

Steps:

  • 1. Cook the pasta in boiling salted water until al dente. Drain and set aside reserve 1/4 cup pasta water
  • 2. Add the butter to a large pot big enough to accommodate the pasta. Let the pasta melt and whisk in the flour. Cook a minute. Add the wine and let reduce a bit about 2 minutes. Add the heavy cream, and vegetable stock. Bring to a boil. Reduce heat to a simmer. Add the cheese and simmer stirring frequently for 10 minutes. Until reduced and thickened. Add in the reserved pasta water and the pasta. Let cook 2 minutes.
  • 3. Stir in the parsley, nutmeg, and black pepper. Serve
