10 ounces marshmallows (or 4 cups miniature marshmallows)
6 cups crispy rice cereal
12 to 14 candy canes

BUTTERSCOTCH RICE KRISPIES® BARS

Butterscotch Rice Krispies® Bars image

This is what I grew up with in lieu of 'scotcheroos'. They are simpler to make and pack a much richer flavor which means when I bite into similar recipes (hoping for this flavor), I am disappointed and want my homemade version!

Time 1h30m

Yield 16

Number Of Ingredients 9

cooking spray
½ cup unsalted butter
½ cup sweetened condensed milk
1 (10 ounce) package miniature marshmallows
1 cup miniature marshmallows
1 tablespoon vanilla extract
1 teaspoon fine sea salt
6 cups crispy rice cereal (such as Rice Krispies®)
1 pinch Sea Salt, gray

Steps:

  • Grease an 8x8x2-inch pan with cooking spray.
  • Melt butter in a large pot over medium heat. Add sweetened condensed milk. Stir with a rubber spatula until butter and milk are uniformly combined and small bubbles are forming in the center of the mixture, about 2 minutes. (When you first begin stirring they will look separated.) Add the bag of marshmallows and stir until melted and smooth. Add vanilla extract and salt and stir again. Remove from heat.
  • Stir rice cereal and remaining cup of marshmallows into the pot to combine. Transfer to the prepared pan and press down lightly with a sheet of plastic wrap; don't pack them down too hard or they will lose their inherently soft and gooey texture. Sprinkle with flaky sea salt.
  • Let set up on the counter for at least 1 hour. Cut into 16 squares.

Tips:

  • Be careful not to overcook the marshmallows, or they will become tough.
  • Add the Rice Krispies cereal to the marshmallow mixture as soon as it is melted, and stir until well combined.
  • Press the Rice Krispie mixture firmly into the prepared baking pan.
  • Let the Rice Krispie bars cool completely before cutting them into squares.
  • For a fun twist, you can add other ingredients to the Rice Krispie bars, such as chocolate chips, nuts, or dried fruit.
  • Rice Krispie bars can be stored in an airtight container at room temperature for up to 3 days.
