3 ounces unsalted butter, cut into 1/4-inch cubes and chilled
2 1/4 ounces molasses
1 1/2 ounces whole milk
1/2 teaspoon vanilla extract

Steps:

  • Place both flours, sugar, baking powder, baking soda, salt and cinnamon into the bowl of a food processor and pulse several times to combine. Add the butter and pulse until the mixture resembles cornmeal. Add the molasses, milk and vanilla extract and process until the dough forms a ball, approximately 1 minute. Press the ball into a 1/2-inch thick disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  • Preheat the oven to 350 degrees F.
  • Unwrap the chilled dough and place it onto a large piece of parchment paper and top with a second sheet of parchment paper. Roll the dough out until it is 1/8-inch thick. Slide the rolled dough and parchment paper onto a half sheet pan. Remove the top sheet of parchment paper and cut the dough, using a rolling pizza cutter into 2-inch square pieces, by making vertical and then horizontal cuts all the way across the dough. Trim off any excess. Using a fork, poke holes all over the top of the dough. Leave the crackers on the pan and bake on the middle rack of the oven for 25 minutes or until the edges just start to darken. Remove from the oven, set the sheet pan with the crackers on a cooling rack and allow to cool completely. How to Make Your Own Homemade

This is in response to a request for an alternative to Graham Crackers for those who live in countries where these are unavailable. I've tried shortcutting these to make a baked graham cracker crust, but found sometimes shorter isn't always better. These remind me of Nabisco's Honey Grahams. If you wish to make them into the Cinnamon Grahams, just sprinkle a little cinnamon and sugar over the top before baking.

1 cup white flour
1 1/4 cups whole wheat flour
5 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon baking soda

3 tablespoons butter or 3 tablespoons margarine, cold and sliced into small pieces
1/4 cup vegetable shortening (I use Crisco.)
2 tablespoons honey

  • Combine flours, sugar, salt, baking soda, baking powder, and cinnamon in a large bowl.
  • Work in the butter and shortening with your fingers until the mixture has the consistency of coarse crumbs.
  • In a separate bowl, mix the honey, molasses, water and vanilla.
  • Sprinkle this mixture over the dry ingredients and toss with a fork until well blended.
  • Form the dough into a ball.
  • Cover and chill for several hours.
  • Cut the dough in half and let it sit for 15 minutes at room temperature.
  • Sprinkle a piece of wax paper with whole wheat flour.
  • Roll out one of the dough pieces flat to about 7 x 15 inches.
  • If the dough cracks or breaks, just pinch the edges back together.
  • Poke a fork into the dough at 1/2-1" intervals.
  • Then cut into 2 1/2" squares.
  • Use a spatula to move the squares to a large, ungreased baking sheet.
  • You can place them close together.
  • Repeat with the other half of the dough.
  • Bake in the center of the oven for 15 minutes at 350 deg F or until lightly browned on the edges.
  • Store at room temperature in an airtight container.
  • Will keep up to a month (Remember there are no preservatives).

In the bowl of an electric mixer fitted with the paddle attachment, beat together the butter, granulated sugar, and brown sugar on medium speed until the mixture is light yellow and fluffy, about 3 minutes. With the mixer on low speed, add a third of the flour mixture and 1/4 cup of water. Mix for 30 seconds. Repeat this step once, then add the remaining flour mixture and mix just to combine. Turn the dough out onto a lightly floured surface and knead by hand for about 10 seconds. Divide the dough in half. Cover one half with plastic wrap and set it aside.

Homemade graham crackers are actually easy! Here is a recipe from Fran Costigan from the best cookbook ever: Vegan Chocolate. Seriously, buy that book. The recipes and photos are all outstanding. This recipe doesn't call for graham flour, because not everyone has that in the cupboard, but toasting flour first has the same effect. It also calls for regular sugar to be ground in a blender until it becomes powdered sugar. That's because purchased powdered suger has corn starch in it and changes the texture. But I think you could probably cheat. If you are making these for crumbs, it makes about 2 cups.

1 1/2 cups whole wheat pastry flour (198 grams)
1/2 cup sugar, ground in a blender until powdered (49 grams)

3 tablespoons maple syrup (45 ml)

  • Toast the flour: Position a rack in the center of the overn and preheat to 350 degrees F / 180 degrees Celsius Line a rimmed baking sheet with parchment paper. Spread the flour and toast for 10 minutes, stirring a few times. Cool the flour before continuing.

Cover the dough with a second piece of parchement and use a rolling pin to roll the dough to about 14 x 10 inches (35.5 x 25 cm) and 1/4 inch (6 mm) thick. The thickness should be uniform for the crackers to bake uniformly.
  • Remove the top sheet of parchment and cut the edges to make a neat rectangle. Cut 2 inch (5 cm) square pieces. Using a fork, poke holes all over the top.
  • Transfer the dough, still on the parchment to the baking sheet. Run a sharp knife through the cuts again.
  • Bake on the middle rack for 11 to 12 minutes or until the tops are uniformly dry and the bottoms lightly browned.

MOM'S ICE BOX CAKE WITH GRAHAM CRACKERS

Mom always made the icebox cake for us when we were kids.She made it with cooking pudding. You can add bananas or pineapple and you can top it off with whipped cream. I always like it this way the way mommy made it. Once the pudding melts into the graham crackers it just melts in your mouth.

16oz pkg graham crackers
1 pkg (3.5 oz.) instant vanilla pudding mix or cooking pudding
1 pkg (3.5 oz.) instant chocolate pudding mix or cooking pudding
5 c whole milk

Steps:

  • 1. The box says 2 cups of milk I added 1/2 extra which gave me a little bit more pudding. Blend the pudding mixes in different medium sized bowls. Stir until well blended. If using cooking pudding follow the instructions on the box.
  • 2. Place one single layer of graham crackers(save some) in the bottom of a 9x13" baking pan. Leave the crackers whole, do not crumble. You can fill in the gaps with broken graham crackers. Spread the chocolate or vanilla on top of crackers (save a little of each pudding for the last layers. Cover with another layer of crackers, Spread the remaining of the pudding on top follow by another layer of crackers. Now put the saved puddings of vanilla and chocolate making a swirl on top. Take the saved crackers and crumble them on top.
  • 3. Cover the pan with plastic wrap and chill in the refrigerator for 4 hours. Once finished watch your fingers it doesn't last.

These are a really different use for your dehydrator. These crackers come out softer and more like cookies. Very tastey sort of reminded me of a protein bar. If you use regular graham crackers they could be shared with your favorite pooch as well. Makes 50 cracker/cookies.

3 ripe bananas, sliced
1/2 c creamy peanut butter
2 1/2 c regular grahams or chocolate covered graham crackers, crumbled
1 c ground peanuts
1/2 tsp cinnamon
NOTE: FOR DOGS USE ONLY THE PLAIN GRAHAM CRACKERS. YOU CAN ADD CAROB IF DESIRED, I DON'T

Steps:

  • 1. In a large bowl, mash bananas; cream in peanut butter. Add graham cracker crumbs, peanuts and cinnamon, mixing until well blended. Form dough into a ball. Place on a large sheet of waxed paper and shape into a long rectangle. Wrap waxed paper tightly around the dough and chill 4 to 6 hours or overnight. With a serrated knife, slice dough into 1/4" slices. Place on regular sheets; dry at 145º for 4 to 6 hours or until firm (these will be softer than other crackers, more like cookies). Makes approximately 50 crackers.

  • Mix oats and dry milk together in a large bowl. Add peanut butter; mix by hand or with a wooden spoon until combined. Stir in honey.
  • Place crushed graham crackers in a large bowl or baking dish.
  • Form peanut butter mixture into small balls, about 1 to 1 1/2-inches across. Roll each ball in graham crackers and place on a platter.
  • Refrigerate until firm, at least 2 hours and up to overnight.

This is adapted from a honey graham cracker recipe. The thought of banana graham crackers with peanut butter just sounded so good I just had to try to create this recipe.

1 1/4 cups all-purpose flour
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup brown sugar, packed
1 1/2 teaspoons cinnamon
1/8 teaspoon clove
1/8 teaspoon nutmeg
1/2 cup butter, melted (1 stick)
1/3 cup mashed banana (1 banana)
2 tablespoons honey
2 tablespoons molasses
1/2 teaspoon vanilla extract

Steps:

  • Combine dry ingredients in a large bowl. Set aside.
  • In a medium bowl, mix melted butter, banana, honey, and molasses; stir to mix. Add vanilla extract.
  • Pour banana mixture all at once into flour mixture. Using a fork, stir until mixture is combined with all flour mixture. Knead dough in bowl until all flour is incorporated. Dough will be crumbly. Divide dough into smaller pieces; roll each piece between 2 pieces of waxed paper(or parchment paper) to 1/8" thickness.
  • Cut with a 2 1/2" round cookie cutter and transfer to an ungreased baking sheet. Bake in a 325*F. oven for 15-17 minutes or until golden brown.
  • Makes about 40 crackers.

WHOLE WHEAT GRAHAM CRACKERS OR COOKIES

I found this on one of my favorite sites called Heavenly Homemakers. I doubled this recipe and made half into crackers & half into cookies. My kids loved these with a tall glass of milk.

Number Of Ingredients 10

2 1/4 c whole wheat flour, (i used freshly ground hard white)
1/2 c brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp cinnamon
1/4 c honey
1/4 c water
1 tsp vanilla
1 stick butter, melted

Steps:

  • 1. Combine wet ingredients.
  • 2. Combine dry ingredients.
  • 3. Combine both mixtures.
  • 4. Roll into tablespoon size balls & place on a greased cookie sheet about 2" apart.
  • 5. Flatten each one slightly with the bottom of a glass.
  • 6. Bake at 350' for 12-15 minutes.
  • 7. Turn off the oven & leave the cookies in it for between 30-60 minutes to crisp up.
  • 8. For graham crackers:
  • 9. Line your cookie sheet with parchment paper that has been greased.
  • 10. Place half of dough on it & top with a piece of parchment paper.
  • 11. Roll dough to spread to edges of cookie sheet.
  • 12. Remove top piece of parchment paper & using a pizza roller cut the dough into 4" squares.
  • 13. If desired, use a fork to make holes in crackers.
  • 14. Bake as directed.

Tips:

  • Use fresh graham cracker crumbs. Stale crumbs will make your recipes dry and crumbly.
  • Measure your ingredients accurately. Too much or too little of any ingredient can throw off the balance of your recipe.
  • Don't overmix your batter. Overmixing can make your baked goods tough.
  • Bake your graham cracker recipes at the correct temperature and for the correct amount of time. Underbaking or overbaking can ruin your recipe.
