1 3/4 cups rolled oats
1 1/2 cups flour
1 cup brown sugar
3/4 cup butter
1 teaspoon baking soda
1/4 teaspoon salt
1/2 lb dates (chopped fine)
1 cup white sugar
1 cup water

Steps:

  • Mix: oats, flour, brown sugar, butter, baking soda and salt then press on bottom of 8x8 pan.
  • Boil: dates, sugar and water until thick.
  • Bake 20-30 minutes in 375 F oven.
  • Cool before serving.

2 cups (500 mL) dates
1 cup (250 mL) hot water
1 cup (250 mL) packed brown sugar
1 ½ cups (375 mL) rolled oats
1 cup (250 mL) flour
¾ cup (175 mL) Spyglass Butter or other butter
1 ½ tsp (7 mL) baking soda
½ tsp (2 mL) salt

Steps:

  • In saucepan, combine dates, water and ½ cup (125 mL) of the brown sugar; simmer over medium heat until dates are mashable. Give them a stir to ensure the dates have fallen apart completely.
  • In large bowl, mix together oats, flour, remaining brown sugar, butter, baking soda and salt until crumbly.
  • Divide oat mixture in half. Press half (or slightly more than half) into bottom of an 8-inch glass baking dish. Spread the entire date mixture overtop; crumble remaining oat mixture over top.
  • Bake at 350˚F (180˚C) for just under an hour or until golden. Let cool and cut into squares.

My MIL's easy, no fail date squares...Make an extra batch of the date jam its good on its own...over bagels or toast. If your date jam is a little thick. Add a little extra water to thin it out, until it is the consistency that you like. Becareful not to make it too thin.

1 1/2 cups flour
1 cup rolled oats
1 cup sugar, brown
1/2 cup walnuts (optional) or 1/2 cup pecans, chopped (optional)
1/4 teaspoon salt
3/4 cup butter
1 1/2 cups dates, pitted and chopped
1/4 cup sugar, brown
1/2 cup water
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • Date Jam
  • Combine dates, sugar, water and vanilla in saucepan and bring to a boil.
  • Simmer 5 minutes, until mixture resembles a thick paste.
  • Cool completely
  • Oatmeal Layer
  • Combine flour, oats, sugar, nuts and salt in mixing bowl.
  • Cut in butter.
  • Reserve 2 cups of this mixture for topping.
  • Press remaining mixture into bottom of greased 9 x 9" pan.
  • Spread cooled date jam over the bottom layer and sprinkle reserved oatmeal mixture evenly over top.
  • Bake 25- 33 minute.
  • Cool completely then cut into squares.

1 1/2 cups oatmeal
1 1/2 cups sifted pastry flour
1/4 teaspoon salt
3/4 teaspoon baking soda
1 cup packed brown sugar
3/4 cup butter ( reviews say 1 cup butter )
3/4 pound dates diced
1 cup water
1/3 cup packed brown sugar
1 teaspoon lemon juice

Steps:

  • ( 1 ) Preheat oven to 350 F ( 2 ) In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square pan. ( 3 ) In a small saucepan over medium heat, combine the dates, water and 1/3 cup brown sugar. Bring to a boil and cook until thickened. Stir in lemon juice and remove from heat. Spread the filling over the base and pat the remaining crumb mixture on the top. ( 4 ) Bake for 20-25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.
