Number Of Ingredients 10

2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cinnamon
3/4 teaspoon ground cloves
1/8 teaspoon salt
2/3 cup vegetable shortening
1 cup sugar
2 large eggs
1 cup well-shaken buttermilk
1 cup raisins

Steps:

  • Preheat oven to 350°F and butter and flour a loaf pan, 9 1/4 by 5 1/4 by 2 3/4 inches, knocking out excess flour.
  • Into a bowl sift together flour, baking soda, cinnamon, cloves, and salt.
  • In a large bowl with an electric mixer cream shortening with sugar until light and fluffy. Add eggs 1 at a time, beating well after each addition. Add flour mixture alternately with buttermilk in batches, beginning and ending with flour mixture and beating batter after each addition until just combined. Stir in raisins.
  • Pour batter into pan and bake in middle of oven 50 to 60 minutes, or until a tester comes out clean. Cool cake in pan on a rack 10 minutes and turn out onto rack to cool completely.

1 cup hot, brewed coffee
½ cup raisins
½ cup shortening
1 cup white sugar
2 eggs
2 tablespoons molasses
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground cloves
½ teaspoon ground ginger
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup chopped walnuts

Steps:

  • Soak raisins in coffee until plump. Do not drain.
  • Cream together the shortening, sugar and eggs. Blend in molasses and vanilla.
  • In a large bowl mix together the cinnamon, nutmeg, cloves, ginger, flour, baking soda, and salt. Make a well in the center of the bowl.
  • Add the liquid ingredients to the well in the dry ingredients. Stir in coffee with raisins and nuts. Pour batter into a greased 9x5 inch loaf pan.

Number Of Ingredients 16

1/3 cup sugar
1/4 cup shortening
1/4 cup light molasses
1/4 cup honey
1 1/3 cups flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cardamom
1/4 teaspoon salt
1/2 cup apple cider, boiling
1 egg, beaten
1 teaspoon vanilla
1/2 cup apple jelly
1 tablespoon apple cider
1/2 cup chopped walnuts

Steps:

  • Cream sugar and shorttening in a large bowl until light and fluffy.
  • Beat in molasses and honey.
  • Combine dry ingredients and add 1/2 to the creamed mixture; beat until moistened.
  • With mixer running at low speed, blend in hot cider.
