1 pound brown sugar
4 eggs
2 cups all-purpose flour
½ teaspoon salt
1 teaspoon vanilla extract
1 cup chopped pecans

Steps:

  • Preheat oven to 400 degrees F ( 200 degrees C ). Grease a 15x10x1 inch jellyroll pan.
  • In a heavy saucepan combine the sugar and eggs. Cook over medium heat, stirring constantly until sugar is dissolved. Remove from heat, stir in the flour, salt, vanilla, and pecans.
  • Spoon mixture into the prepared baking pan and bake for 15 minutes in the preheated oven. Cool and cut into squares.

2 cups butter, softened
3 cups sugar
5 eggs, separated
1 teaspoon vanilla extract
5 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup buttermilk
2 jars (10 ounces each) maraschino cherries, drained and chopped
1 cup chopped pecans

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolks and vanilla. Combine the flour, baking soda, baking powder and salt; add to the creamed mixture alternately with buttermilk just until blended (batter will be thick). , In a small bowl, beat egg whites until stiff peaks form. Fold into batter. Fold in cherries and pecans., Transfer to four greased and floured 8x4-in. loaf pans. 8 -11 cups flour, divided
4 teaspoons yeast
4 cups hot water
4 teaspoons salt
2/3 cup oil (original recipe calls for canola or other vegetable, we use olive oil)
1/3 cup sugar

Steps:

  • Place 4 cups flour in large mixer bowl with dough hook.
  • In separate bowl combine water, oil, sugar, yeast, and salt. With mixer on low pour liquid into mixer. Combine well.
  • Add flour 1 cup at a time, mixing well after each addition, until dough is not sticky and comes all together. Once all combined, allow mixer to knead on low 5-10 minutes.
  • Oil dough and bowl, cover with a cloth and put in warm area. Allow to rise until doubled (about an hour).
  • Turn out onto lightly floured surface and roll into log. Divide into 3 equal parts. Place into well greased bread pans.
  • Cover and let rise until doubled. Preheat oven to 375°.
  • Bake for 35 minutes.
