Great salsa for canning or freezing. My whole family loves it! Easy to double or triple recipe depending on how many tomatoes you have.

Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 8

4 cups fresh tomatoes
2 cups bell peppers, chopped
1 cup onion, chopped
1 cup jalapeno, chopped
3 garlic cloves, chopped
1 tablespoon salt
1/2 cup apple cider vinegar
1 (6 ounce) can tomato paste

Steps:

  • Skin tomatoes. (I place tomatoes in boiling water for 45-60 seconds or until skins split - remove from water and peel.)
  • Rough chop and remove seeds from tomatoes.
  • Combine all ingredients in large sauce pan. Bring to boil. Lower heat and simmer 45 minutes stirring often.
  • Pour into hot sterile jars. Wipe down rim of jar. Screw on lid and hand tighten.
  • Place in boiling water bath and process for 15-20 minutes.
  • Tip: Be sure and label your batches. As the summer progresses peppers can get hotter. I also sometimes blend the batch before I can.

Tips:

  • Utilize ripe tomatoes: When making salsa, it's important to use ripe and flavorful tomatoes. Ripe tomatoes have a deeper red color, are softer to the touch, and have a sweeter taste.
  • Choose the right type of tomatoes: Roma tomatoes are a popular choice for salsa because they have fewer seeds and a firmer texture. However, you can use any type of tomato you like, such as cherry tomatoes, heirloom tomatoes, or beefsteak tomatoes.
  • Remove the seeds and ribs: For a smoother salsa, remove the seeds and ribs from the tomatoes before chopping them. You can do this by cutting the tomatoes in half and scooping out the seeds with a spoon.
  • Use fresh ingredients: The fresher the ingredients you use, the better your salsa will taste. Try to use fresh herbs, such as cilantro, basil, or oregano, and fresh limes or lemons for the citrus juice.
  • Don't overcook the salsa: Salsa is best when it's fresh and chunky. Overcooking the salsa will make it lose its flavor and texture.

Conclusion:

Making homemade salsa is a great way to use up fresh ingredients and create a delicious condiment that can be enjoyed in a variety of ways. With a few simple ingredients and a little bit of time, you can make a salsa that is sure to impress your friends and family. So next time you're looking for a quick and easy appetizer or snack, give one of these salsa recipes a try.
