Time 7h25m

Number Of Ingredients 11

2.5 lbs. round steaks (or bottom or top round roast cut into thick steaks (2-4 pounds will work fine in this recipe))
1/2 cup flour
1 tsp. salt
1/4 tsp. black pepper
4 Tbsp. cooking oil
10.5 oz. Campbell's beef consomme (or beef broth)
29 oz. petite diced tomatoes ((two 14.5 oz. cans) do not drain)
2 Tbsp. Worcestershire sauce
1 cup diced onion
1 green bell pepper
2 garlic cloves (minced)

Steps:

  • On a large plate add the flour and salt and pepper. Mix this together.
  • Dredge each steak in this mixture on both sides, transfer to another plate. Save any excess flour mixture, you will add this to the slow cooker with the meat later.
  • Set a large skillet to medium high heat. Add enough oil to coat the pan. Brown the steaks on both sides, no need to cook through. You may have to cook the meat in two batches if your pan is too small, add more oil inbewteen batches. Add the browned steaks to the slow cooker. Sprinkle over any excess flour from the plate.
  • Deglaze the pan that you browned the meat in with by adding the beef consomme and scrapping up any brown bits. Add to the slow cooker on top of the beef.
  • Add the remaining ingredients, stir.
  • Place the lid on the slow cooker. Cook on LOW for 7 hours or HIGH for 4 hours with out opening the lid during the cooking time.

MY GRANDMOTHER'S SWISS STEAK

My Grandmother's Swiss Steak image

There are a lot of swiss steak recipes here, but all of them have a lot of "stuff" in it. My grandfather was a very picky eater, and this is the way my grandmother made swiss steak. Granddaddy loved it, and we all did, too. In fact, my sister always wanted Swiss Steak for her birthday dinner. The gravy is best on mashed potatoes, but it's not too shabby over rice, either. This is not fancy, but it sure is good! My grandmother used her home-canned tomatoes in this, but it's almost as good with store-bought.

2 lbs round steaks
1 (14 1/2 ounce) can diced tomatoes
1 -2 onion, chopped (to taste)
flour (for dredging)
salt & pepper
oil

Steps:

  • Note: I usually use one very large onion. If your onions are small, use two.
  • Heat oil in cast iron skillet over medium high heat. Sprinkle steaks with salt and pepper and dredge in flour.
  • Brown steaks on both sides in hot oil. Remove from skillet and place in oven-safe dish. (I use a 9 x 13 pyrex dish.).
  • Add onions to skillet and saute until they start to brown around the edges. Pour in tomatoes and stir to loosen browned bits on bottom of skillet.
  • Pour tomato mixture over steaks. Cover (I use foil) and bake at 350 for an hour or till meat is very tender.

Tips:

  • Choose the right cut of beef. Swiss steak is traditionally made with a tough cut of beef, such as chuck roast or round steak. These cuts are less tender than more expensive cuts, but they become tender when cooked slowly in a liquid.
  • Brown the beef before cooking. Browning the beef adds flavor and helps to seal in the juices.
  • Use a flavorful liquid. The liquid you use to cook the Swiss steak will add flavor to the dish. Common choices include beef broth, water, tomato sauce, or a combination of these liquids.
  • Add vegetables and herbs. Vegetables and herbs can add flavor and color to the Swiss steak. Common additions include onions, carrots, celery, garlic, and thyme.
  • Cook the Swiss steak on low heat for a long time. Swiss steak is a slow-cooked dish that takes time to develop its flavor. Cook the steak on low heat for at least 8 hours, or until the meat is fall-apart tender.

Conclusion:

Swiss steak is a hearty and flavorful dish that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. With a little planning, you can have a delicious and comforting meal on the table with minimal effort.
