I often freeze this sweet bread once it's shaped into a braid. 3 to 3-1/2 cups all-purpose flour
1/3 cup sugar
1 package (1/4 ounce) active dry yeast
1-1/4 cups 2% milk
6 tablespoons butter, cubed
2 teaspoons grated lemon zest
FILLING:
1 can (12-1/2 ounces) almond cake and pastry filling
1 cup finely ground almonds
1 tablespoon 2% milk
1 teaspoon rum extract
GLAZE:
1/4 cup confectioners' sugar
1/2 to 1 teaspoon 2% milk

Steps:

  • In a large bowl, combine 2 cups flour, sugar and yeast. In a small saucepan, heat milk and butter to 120°-130°. Add to dry ingredients; beat just until moistened. Add lemon zest; beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., For filling, in a large bowl, beat almond pastry filling, almonds, milk and extract. Punch dough down; turn onto a floured surface. Divide into thirds. Roll each portion into a 15x6-in. rectangle. Spread each portion with a third of the filling to within 1/4 in. of edges. Roll up jelly-roll style, starting with a long slide; pinch seam to seal. Place ropes on a parchment-lined baking sheet. Using a sharp knife, make a 1/2-in.-deep cut lengthwise down the center of each rope, stopping 1/2 in. from ends. Keeping cut surfaces facing up, braid ropes. Pinch ends to seal; tuck under., Cover with a kitchen towel; let rise in a warm place until almost doubled, about 30 minutes. Preheat oven to 375°. Bake until golden brown, 30-35 minutes. Remove to a wire rack to cool. Combine glaze ingredients to desired consistency; drizzle over stollen.

Turkey giblets
3 to 4 cups turkey broth or chicken stock
1 large (1 1/2 pound) loaf white bread, stale or day-old, torn into 1-inch pieces
1/4 pound (1 stick) butter
2 onions, chopped
1 cup chopped celery
1 to 2 tablespoons poultry seasoning
1/4 cup chopped fresh parsley
2 teaspoons salt
1/2 teaspoons freshly ground black pepper

Steps:

  • Preheat the oven to 350°F. Grease a 9x13x2-inch ovenproof serving dish or spray with nonstick spray.
  • Put the turkey giblets in a medium pot, add 1 1/2 cups broth, place over high heat, and bring to the boil. Reduce the heat and simmer, uncovered, for 1 to 1 1/2 hours, adding water if the liquid boils out. Strain and reserve the broth. Coarsely chop the giblets, removing any bones or extra fat. You should have about 1 cup giblets.
  • In a large bowl, mix together the turkey giblets and the bread. In a large skillet on medium-high heat, heat the butter until it sings (is foamy). Add the onions and celery and cook until soft, about 5 minutes. Pour into the bread mixture. Stir in the poultry seasoning, parsley, salt, and pepper, and enough reserved giblet broth to moisten the mixture, adding plain broth, if necessary, so that you are using about 1 1/2 to 2 1/2 cups all together. Toss thoroughly and pour the dressing into the prepared dish. Bake 30 minutes, adding more stock as needed to keep the dressing moist.
  • The dressing can be refrigerated up to 3 days or frozen for up to 3 months. Let it defrost in the refrigerator overnight, cover with foil, and reheat at 350°F. for 30 minutes.

4 1/4 cups white flour, divided
1 (1/4 ounce) package active dry yeast
1/2 teaspoon salt
1/3 cup sugar
1 cup milk
1 teaspoon vanilla
1/2 cup unsalted butter
2 tablespoons unsalted butter, melted
2 eggs
1 cup walnuts, finely chopped
ground cinnamon, for sprinkling on dough

Steps:

  • In a large bowl, mix 3 cups flour, yeast, salt and sugar well.
  • In a saucepan, heat milk, vanilla, and 1/2 cup butter slightly until butter melts. Cool with an ice cube.
  • Add milk mixture to flour mixture and mix by hand for 2 minutes.
  • Add 1/2 C flour and eggs and mix until well blended.
  • Stir in remaining 3/4 C flour and hand mix until dough is smooth.
  • Cover and refrigerate for 1 hour.
  • Roll out dough into two oblong shapes and spread 1 Tbsp melted butter on each piece.
  • Sprinkle cinnamon and spread nuts onto both pieces of dough, to 1/2" from the edge.
  • Roll up jelly roll fashion along the long side of the dough, and crimp ends shut. Seal ends and opening along dough with wet fingers, so that dough does not open up during baking.
  • Place both on an ungreased cookie sheet, and allow to rise uncovered in a warm place until double in bulk, 1 to 1 1/2 hours.
  • Bake in a preheated 350° F oven for 20 minutes, until light golden brown.
  • Allow to cool and frost with desired frosting.

1 ½ cups milk
½ cup sugar
1 ½ teaspoons salt
2 teaspoons lemon zest
¾ cup butter
1 (.25 ounce) envelope active dry yeast
1 teaspoon white sugar
¼ cup warm water
2 eggs
2 egg yolks
5 ⅔ cups all-purpose flour
1 cup raisins
½ cup chopped nuts
1 egg, beaten

Steps:

  • In a small saucepan, heat milk until hot, but not boiling; mix in 1/2 cup sugar, salt, lemon zest, and butter. Remove from heat, and cool slightly. In a small bowl, mix together yeast, 1 teaspoon sugar, and 1/4 cup water; stir into milk. Beat in 2 eggs and egg yolks. Mix in 3 cups flour. Cover, and let rise in a warm place.
  • Mix in the raisins and nuts. Gradually mix in enough of the remaining flour to form a soft dough. Place dough in a well-oiled bowl, cover, and set aside to rise.
  • Divide dough into 3 balls. Roll each ball out into a thick log, braid, and tuck the ends under. Place on a large cookie sheet, and set aside to rise one more time.
  • Preheat oven to 350 degrees F (175 degrees C). Brush beaten egg over the dough. It gives a shine to it.
  • Bake in preheated oven for 45 minutes.

1 packages yeast
7.5 cups flour
3 units eggs
1 cups sugar

  • Knead on floured board. Put in greased bowl and let rise until doubled. Punch down and form*. Let rise.
  • Bake at 375 degrees F for 30 minutes.
