2 cups all-purpose flour, sifted
1 cup white sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/4 cup butter
1 egg, beaten
1 teaspoon orange zest
3/4 cup orange juice
1 1/2 cups golden raisins
1 1/2 cups cranberries, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Ggrease one 9x5x3 inch loaf pan.
  • Whisk together the flour, sugar, baking powder, salt and baking soda.
  • Cut in butter until mixture is crumbly. Add egg, orange peel, and orange juice; stir to mix and fold in raisins and cranberries.
  • Pour into loaf pan and bake for 70 minutes or until toothpick inserted comes out clean. Remove from pan; cool on wire rack.

Tips:

  • Selecting Fresh Cranberries: Choose plump, firm cranberries that are deep red in color. Avoid berries that are soft, bruised, or have blemishes.
  • Preparing Cranberries: Before using, rinse the cranberries thoroughly under cold water to remove any dirt or debris. If the recipe calls for chopped cranberries, use a sharp knife to cut them into small pieces.
  • Measuring Flour: To ensure accurate measurements, use a kitchen scale to weigh the flour. If you're using cups, spoon the flour into the measuring cup and level it off with a knife.
  • Mixing the Batter: When mixing the batter, be careful not to overmix it. Overmixing can result in a tough, dense bread. Mix just until the ingredients are combined.
  • Baking the Bread: Preheat the oven to the correct temperature before baking the bread. This will help ensure that the bread bakes evenly. Bake the bread for the amount of time specified in the recipe. Overbaking can result in a dry, crumbly bread.

Conclusion:

Creating a delectable Cranberry Bread is a delightful culinary experience that combines the tartness of cranberries with the comforting warmth of bread. Whether you prefer a classic recipe or a unique variation, there's a Cranberry Bread recipe out there to suit every taste.
