GRANDMA'S CUCUMBER AND ONION SALAD

Grandma's Cucumber and Onion Salad image

Both of my grandmothers made this salad every summer when their gardens produced baskets of cucumbers. It's a cool, fresh side dish for any meal. One of my grandmas omitted the green pepper and the celery seed. She also put ice in it to chill it quickly and cut the vinegar taste.

GRANDPA'S GERMAN CUCUMBER SALAD - JANET'S - KITCHEN

Grandpa's German Cucumber Salad - Janet's - Kitchen image

My German heritage on my father's side brought me many delicious recipes that I came to love and continue to prepare for my family time and again. This salad is just one of them. Althogh I have tweaked the recipe just a bit from the way Grandpa made it, it is still just as delicious as the way my grandfather made it. Making it several hours before serving it gives it time to marry the flavors. It is one of my favorite salads. I can sit down and eat a bowl of this salad all by itself in no time!

Time 15m

Number Of Ingredients 10

2 English cucumbers peeled and thinly sliced
1/2 medium red onion sliced thinly
2 tablespoons salad oil
2 tablespoons cider vinegar
1/2 cup sour cream
1 1/2 teaspoons kosher salt
1 teaspoon granulated sugar
2 tablespoons dried chives
2 tablespoons dill weed
dried or fresh parsley to taste

Steps:

  • Place the sliced cucumbers in a bowl with lid. Add all the other ingredients and combine gently. Chill overnight, stirring once or twice. Add more salt to taste. Serve cold. The salt will draw out the water from the cucumbers and thin the dressing considerably. The dressing should be thin and tart.

Tips:

  • For the best flavor, use fresh, crisp cucumbers.
  • Slice the cucumbers thinly so that they will absorb the dressing more easily.
  • Use a sharp knife to slice the cucumbers so that they do not get bruised.
  • To make the dressing, whisk together all of the ingredients until well combined.
  • Pour the dressing over the cucumbers and toss to coat.
  • Chill the salad for at least 30 minutes before serving so that the flavors can meld.
  • Serve the salad as a side dish or as a light lunch.

Conclusion:

German cucumber salad is a refreshing and flavorful side dish that is perfect for summer gatherings. It is easy to make and can be customized to your liking. Whether you like it sweet, sour, or tangy, there is a German cucumber salad recipe out there for you. So next time you are looking for a light and refreshing side dish, give German cucumber salad a try.
