2 eggs
1 (20 ounce) can crushed pineapple with juice
2 cups all-purpose flour
1 cup white sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
½ cup packed light brown sugar
½ cup chopped walnuts
½ cup butter
½ cup white sugar
½ cup evaporated milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix the eggs, undrained crushed pineapple, flour, 1 cup of the white sugar, baking soda, salt, and 1 teaspoon of the vanilla together and stir until just combined. Pour batter into one ungreased 9x13 inch baking pan.
  • Combine the light brown sugar and the chopped nuts. Sprinkle over the top of the cake batter. Bake in preheated oven for 25 to 35 minutes or until cake tests done. Remove cake from oven and pour topping over hot cake.
  • To Make Topping: In a small saucepan combine the butter or margarine, the evaporated milk, the remaining 1/2 cup of the white sugar, and 1 teaspoon of the vanilla. Cook over medium low heat, stirring occasionally until sugar is dissolved. Mixture will be thin. Pour over hot cake.

1 teaspoon baking soda

2 large eggs

Steps:

  • Preheat oven to 350º F and lightly grease a 9x13-inch baking dish with butter or non-stick spray.

  • Pour batter into your pan and top with an even layer of pecans and brown sugar.

Butter and flour for preparing pans
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups buttermilk
1 teaspoon vanilla extract
11 tablespoons unsalted butter, at room temperature
1 1/2 cups sugar
2 large eggs
4 ounces unsweetened chocolate, melted
Chocolate frosting (see recipe)

Steps:

  • Preheat oven to 350 degrees. Butter 3 9-inch round cake pans, and line the bottoms with wax or parchment paper. Lightly butter the paper. Dust pans with flour, and shake out excess.
  • Sift together the flour, baking soda, baking powder and salt. In a small bowl, combine buttermilk and vanilla.
  • In a large bowl, using an electric mixer set at medium-high speed, cream the butter. Slowly add the sugar, and continue beating until well blended and light colored. Add eggs one at a time, beating well after each addition. Add dry ingredients alternately with the buttermilk mixture in 2 or 3 additions, beating well after each addition. Beat in the melted chocolate until well blended. Spoon batter into prepared pans, and smooth tops with a rubber spatula.
  • Bake for 30 to 35 minutes, or until a toothpick inserted in center of a cake layer comes out clean. Let cake layers cool in the pans on wire racks for 10 minutes, then invert onto other racks and peel off the paper. Invert again, and let cool completely on the racks. Frost with chocolate frosting.

Slightly modified version of a recipe in Everyday Food magazine. This cake is SO good, especially while it's still warm (or reheated). Great for breakfast. Or topped with whipped cream or vanilla ice cream. I choose Granny Smith apples for their tartness and because they hold their shape after baking. The apples come out completely soft after baking. I love the tartness of the apples mixed with the sweetness of the cake. Optional: Add 1/2 cup chopped walnuts if desired. Note: The original recipe called for 1/2c of butter, but I reduced that to 1/4 and added in 1/4 applesauce to lower the fat in the recipe. You won't even miss the extra butter at all.

  • 1. Mix the sugar, flour, salt, baking soda, eggs, and pineapple together. Pour into a 9 x 13" pan.
  • 2. Sprinkle the top with one cup brown sugar and one cup chopped pecans.
  • 3. Bake at 350 degrees for 45 minutes.
  • 4. Cook the following ingredients until mixture comes to a rolling boil: 1 cup evaporated milk, 1/2 c sugar, 1 stick margarine, and 1 tsp of vanilla.

1 c (8oz) mixed candied fruit -coarsely chopped
1 can(s) eagle brand sweetened condensed milk
1 large egg,beaten
1/2 c water
3/4 c flour
1/2 tsp baking soda

Steps:

  • 1. Break Mince Meat into small pieces and put in 2-quart saucepan .ADD WATER.Place over medium heat and stir untill lumps are thoroughly broken . Boil briskly 1 minute ,stiring constantly . Remove from heat and cool
  • 2. Add Nuts ,Candied Fruit,Condensed Milk,and Egg,blend well .Stirl in Flour and Baking Soda untill just blended.
  • 3. Pour mixture into a 9"x4"x3"loaf pan ,which has been greased ,waxed paper lined and greased again. 1 c soured milk (add 1 tsp. vinegar to milk)

1 c boiling water
FROSTING
1/2 c butter
1/4 c cocoa powder
6 Tbsp milk
4 c powdered sugar

Steps:

  • 1. Heat oven to 350 degrees. Grease and flour 9x13 cake pan.
  • 2. In a large mixing bowl combine sugar, flour, cocoa, baking soda, and salt. Add the rest of the ingredients for the cake. Beat for 2 minutes at medium speed
  • 3. Pour into prepared pan, and bake 35 - 40 minutes until done.
  • 4. When cake is almost done baking prepare frosting. Heat butter, cocoa, and milk to boiling. Pour over powdered sugar and mix well.
  • 5. Allow cake to cool for about 10 minutes. Poke small holes in the cake, I use the end of a wooden spoon, then frost the cake while still warm.

  • Spread pineapple in a 9 x 13 inch pan.
  • Sprinkle a layer of coconut on top of the pineapple, and then a layer of dry pudding mix.

She sold those cakes for $20 each and had to tell my dad she wasn't making any more before they left her alone. That's how she got her Christmas money that year, and it was a very good Christmas. She passed away about 2 years ago, and I thought this recipe was lost. Fortunately my Grandma had it and now I have it. Here it is.

1/2 cup shortening
3 cups sugar
1 cup condensed milk

1 orange (squeeze juice save peel for zest)
3 c all-purpose flour
1 tsp baking soda
1/4 tsp salt

3 large Granny Smith apples, peeled and cored and cubed in small pieces
1 c chopped pecans
GLAZE
1 c powdered sugar
1 tsp orange zest
1 dash(es) orange extract (optional)
1 Tbsp milk (depending on how thick you want your glaze)

Steps:

  • 1. Prepare Bundt pan (butter and flour or Baker's Joy) and preheat oven to 325 degrees.
  • 2. Beat together sugar, eggs, oil, vanilla, and orange juice. Mix until smooth.
  • 3. Then slowly add the flour, salt, baking soda, cinnamon, and nutmeg mixing as you go.
  • 4. Fold in apples and pecans. The batter will be very thick and dense.
  • 5. Spoon batter into prepared pan evenly.
  • 6. Bake in preheated oven for 1 hour and 15 minutes or until a tester comes clean. Allow cake to sit in the pan for 10-15 minutes and then turn onto a cake plate. Allow to cool completely.
  • 7. Mix glaze to desired consistency.

1 box french vanilla cake mix
3/4 c canola oil
1/3 c water
3 large eggs
1 1/2 pkg cool whip
1 pkg frozen coconut
8 oz sour cream
2 tsp real vanilla

Steps:

  • 1. Grease and flour two 8 inch round cake pans. In a large mixing bowl combine cake mix, oil, water and eggs. Mix until well blended and mix is smooth. Divide into two pans and tap pans on solid surface to remove air bubbles. Bake in 350 degree oven until firm in the middle. apx. 25 minutes.
  • 2. Place cake on cooling rack and allow to cool completely. In a large mixing bowl place one and half containers of 8 oz cool whip. Add 8 oz of sour cream and vanilla. Mix with wooden spoon until combined. Gently stir in 3/4 of the frozen coconut. Place back in refrigerator to keep cool.
  • 3. Slice the top off of the cakes to make two even layers. Place a small dollop of icing on cake plate to prevent cake from sliding. Invert first layer of cake onto the plate. Frost the cake layer, making an even layer of frosting on top of bottom layer. Place second layer on top and frost the top layer. Be liberal with the frosting. Take the remaining coconut and dust the outside of cake, sides and top. Cake is best if refrigerated for several hours before serving.

1 c white sugar
1 c unsalted butter (room temperature)
1 Tbsp fresh honey
2 eggs (room temperature)

1/2 c cocoa

2 1/4 c all purpose flour
2 c milk chocolate chips
3/4 c shredded coconut
1 c chopped pecans

Steps:

  • 1. Preheat your oven to 325 degrees. Place chopped pecans on cookie sheet and toast 8 minutes until it turns a golden brown in color, turning once after five minutes. After toasted, set the pecans aside and let them cool.
  • 2. Mix brown and white sugars together in bowl, add butter & mix until smooth. Slowly add honey, eggs, and vanilla until all ingredients are combined.
  • 3. In separate bowl sift together AP Flour, cocoa, salt, and baking soda. Add your chocolate chips, 1/2 cup toasted pecans and coconut to the dry mix . Add to the wet and mix until combined.
  • 4. Scoop out cookies of desired size onto parchment lined cookie sheet. (I normally use a 1 1/2" scoop). Top each cookie with a few chopped pecans. Bake 10-12 minutes, rotating pan after 6 minutes.

225g (8 oz) currants
225g (8 oz) raisins
225g (8 oz) sultanas
50g (2 oz) mixed peel
1 orange
150ml (5 fl oz) brandy
200g (7 oz) butter
225g (8 oz) brown sugar
4 eggs
225g (8 oz) flour
1 teaspoon ground mixed spice
1/2 teaspoon ground nutmeg
50g (2 oz) chopped nuts
4 tablespoons apricot jam
block of marzipan, rolled to 0.5cm thick
ready-roll icing, rolled to 0.5cm thick

Steps:

  • 1. Put all your dried fruit into a bowl with the rind and juice of the orange and brandy. Leave overnight to plump up and absorb the alcohol. 2. Grease a round 20cm (8 inch) cake tin. Line the base and sides with 2 layers of baking parchment. Tie a double layer of brown paper (or newspaper) around the outside of the tin. 3. Preheat the oven to 150 C / Gas 2. 4. Cream the butter and sugar. Beat in the eggs. Fold in the flour and spices, then add the fruit mixture and chpped nuts. Spoon the mixture into the the prepared tin. Bake for 3 hours in the preheated oven. 5. Cool in the tin. When room temperature, remove cake from tin and wrap in greaseproof paper and foil for 2-3 weeks (or whenever you need it, but best if at least 1 week). 6. To ice: Warm the apricot jam and spread over the cake. Add a layer of marzipan, and finally a layer of icing. Decorate as wished.

1 tsp baking powder
2 tsp baking soda
3/4 c unsweetened cocoa
2 c sugar
1 c oil
1 c hot coffee
1 c milk
2 eggs
1 tsp vanilla extract
..frosting..
1 c powdered sugar
1 c milk
5 Tbsp flour
1/2 c butter, softened
1/2 c shortening
1 tsp vanilla extract

Steps:

  • 1. preheat oven to 325 degrees; grease and flour the pan.
  • 2. Sift together dry ingredients in a mixing bowl.
  • 3. Add oil, coffee and milk; mix at medium speed for 2 minutes.
  • 4. Add eggs and vanilla; mix 2 more minutes (batter will be thin)
  • 5. pour into pan and bake at 325 degrees for 25-30 minutes. cool on wire racks.
  • 6. meanwhile, for icing, combine the milk and flour in a saucepan; cook until thick. cover and refrigerate.
  • 7. in a mixing bowl beat butter, shortening, sugar and vanilla until creamy.
  • 8. add chilled milk and flour mixture and beat for 10 minutes.
  • 9. frost cooled cake and serve.

2 c sugar
6 eggs
2 c all purpose flour
1 tsp vanilla

Steps:

  • 1. Preheat oven to 350º F.
  • 2. Cream butter well; gradually add sugar; beat well after each addition. Add eggs, one at a time, beating well after each addition. Add vanilla
  • 3. Sift flour, measure and add by folding in a little at a time by hand.
  • 4. Grease and flour a 10-inch tube pan (Mama always put wax paper in her tube pan). Pour in batter and bake at 350º about 45 minutes or until tooth pick comes out clean.

2 c sugar
2 c all purpose flour
4 Tbsp hershey's cocoa powder
1/2 c crisco shortening
1 stick butter, unsalted
1 c water
1 1/2 tsp vanilla
1/2 c buttermilk
1/2 tsp baking soda
2 large eggs, beaten
ICING
4 Tbsp hershey's cocoa powder
6 Tbsp whole milk
1 tsp vanilla
1 stick butter, unsalted
1 box (1 pound) sifted, powdered sugar
1 c chopped nuts (optional)

Steps:

  • 1. Combine flour and sugar in a bowl. Set aside.
  • 2. Combine cocoa, Crisco, butter and water in a heavy saucepan; then bring to a boil.
  • 3. Add hot mixture to sugar and flour.
  • 4. Dissolve baking soda in buttermilk. Add to flour and sugar mixture. Add remaining ingredients. Mix together.
  • 5. Bake in a 15 1/2- by 17-inch pan (jellyroll pan) at 375 degrees for 20 minutes.
  • 6. After cake has been in the oven for 10 minutes, start making the frosting: melt cocoa, milk and butter on stove, using the same pot (cleaned) as before. Bring to a boil. Remove from heat.
  • 7. Add powdered sugar (try to beat out any lumps) and vanilla. Add nuts (if using). Pour hot onto hot cake (this is VERY important!).
  • 8. Enjoy!

1 (20 ounce) can crushed pineapple, with juice
2 cups cake flour
1 teaspoon baking soda
1 cup brown sugar
½ cup butter
¾ cup evaporated milk
