When my mother-in-law (Gran to our kids) had us over for brunch, I especially enjoyed her yogurt parfaits. They were refreshing, light and wholesome. I made a few changes to her recipe and came up with this sweet, crunchy and nutty variation. Yum! -Angela Keller, Newburgh, Indiana

CEREAL GRANOLA PARFAIT
Steps:
- For the granola: Line a baking sheet with parchment.
- Toast the rolled oats, coconut, pecans, cinnamon and salt in a large skillet over medium heat until everything is toasted and aromatic, about 2 minutes. Stir in the maple syrup, butter and brown sugar. Bring the mixture to a simmer and let cook for about a minute to thicken slightly. Fold in the corn puff cereal until completely coated. Transfer the mixture to the prepared baking sheet, spreading it out in a single layer to let cool slightly.
- For the parfait: While the granola is cooling off, stir together the yogurt, maple syrup, vanilla and cinnamon.
- In 4 glasses or mason jars, layer in a spoonful of granola, a layer of yogurt and a layer of mixed raspberries, blueberries and blackberries, repeating as many times as your vessel will fit and finishing with a layer of yogurt. Top each parfait with a couple of berries. Serve right away or chill until ready to serve.
Tips:
- Use a variety of oats. Old-fashioned rolled oats, quick-cooking oats, and steel-cut oats can all be used in granola parfaits. Old-fashioned rolled oats provide a chewy texture, while quick-cooking oats are softer and steel-cut oats have a nutty flavor.
- Sweeten your granola with natural ingredients. Honey, maple syrup, and brown sugar are all good options. You can also use dried fruit, such as raisins, cranberries, or cherries, to add sweetness.
- Add some crunch. Nuts, seeds, and granola are all great ways to add crunch to your granola parfaits. Some popular options include almonds, walnuts, pecans, chia seeds, flax seeds, and pumpkin seeds.
- Use fresh fruit. Fresh fruit is a great way to add flavor and nutrition to your granola parfaits. Some popular options include berries, bananas, peaches, and mangoes.
- Make it a parfait. Layer your granola, yogurt, and fruit in a parfait glass or jar. You can also add a drizzle of honey or maple syrup, or a sprinkle of cinnamon or nutmeg.
Conclusion:
Granola parfaits are a delicious and healthy breakfast or snack. They are easy to make and can be customized to your liking. With a variety of toppings to choose from, there are endless possibilities for creating a delicious and satisfying parfait. So next time you are looking for a quick and easy breakfast or snack, give granola parfaits a try. You won't be disappointed!
