1 pouch (1 lb 1.5 oz) Betty Crocker™ Double Chocolate Chunk Cookie Mix
1/3 cup vegetable oil
2 tablespoons water
1 egg
3 cups powdered sugar
1 package (3 oz) cream cheese, softened
1/4 cup butter, softened
2 tablespoons milk
1/4 teaspoon mint extract
3 to 4 drops green food color
1 oz unsweetened baking chocolate
1 tablespoon butter

Steps:

  • Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
  • In large bowl, stir all Bar ingredients until soft dough forms. Press into pan; bake 15 minutes. Cool about 10 minutes.
  • In large bowl, stir all Frosting ingredients until smooth. Spread over bars.
  • In small microwavable bowl, microwave all Glaze ingredients on High 30 seconds; stir until smooth. Drizzle over frosting. Refrigerate 30 minutes or until set. For bars, cut into 9 rows by 4 rows. Store covered in refrigerator.

⅓ cup white sugar
⅓ cup unsweetened cocoa powder
6 tablespoons cold butter
1 (8 ounce) package cream cheese, at room temperature
¼ cup white sugar
1 egg
1 teaspoon peppermint extract
5 drops green food coloring
¼ cup milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix flour, sugar, and cocoa powder in a large bowl. Cut in butter until mixture resembles fine crumbs. Set aside 1 cup of the crumbs to be used as the topping. Press remaining crumb mixture into an ungreased 8x8-inch baking pan.

For the brownie base:
3/4 cup flour
1/2 teaspoon salt
1 tablespoon cocoa powder
5 ounces dark or bittersweet chocolate (60-72%), chopped, or use chips
1/2 cup butter (1 stick)
3/4 cup sugar
1/4 cup brown sugar, firmly packed
3 eggs
1 teaspoon vanilla
For the buttercream layer:
3/4 cup sugar
2 tablespoons flour
3/4 cup milk
3-4 tablespoons heavy cream, divided
1 1/2 sticks butter (3/4 cup), softened but still cool, cut into cubes
1 teaspoon peppermint extract
Green food coloring (optional)
For the chocolate glaze:
6 ounces dark or bittersweet chocolate (60-72%), chopped, or use chips
1 teaspoon light corn syrup
1/2 cup (1 stick) butter
Make the brownie base:
Pre-heat the oven to 325°F. Spray the sides and bottom of a glass or light-colored metal 9-inch x 13-inch pan with nonstick cooking spray. Line the bottom with parchment paper and spray the paper.
