Slice the cucumber the long way again and slice into uniform pieces. If you want to make it into a salsa dice the cucumber smaller Dice the red onion and red bell pepper. If want more color you can use a 1/4 cup each of red, yellow and orange bell pepper. Tip: if you do not like a strong onion flavor place the onions in cold water till you are ready to use them. Slice the scallions into thin rounds Mince the cilantro and red chili. Note: If you are not a fan of cilantro you can use parsley instead. Zest the lemon and then roll the lemons on the counter and juice them. Mix in a large non reative bowl all the ingreidents except for the feta cheese. Let sit for at least an hour for the falvors to meld together. Right before serving crumble the feta into chucks and toss in to the salad.

Tips for Making the Best Greek Cucumber Salad:

  • Choose the right cucumbers: Look for firm, unwaxed cucumbers that are deep green in color. Avoid cucumbers that are yellow or have blemishes.
  • Slice the cucumbers thinly: This will help them absorb the dressing better.
  • Use fresh herbs: Fresh herbs, such as dill, mint, and oregano, add a lot of flavor to the salad. If you don't have fresh herbs on hand, you can use dried herbs, but they will not be as flavorful.
  • Make the dressing ahead of time: This will allow the flavors to meld and develop.
  • Chill the salad before serving: A chilled salad is more refreshing and flavorful.

Conclusion:

Greek cucumber salad is a refreshing and flavorful dish that is perfect for a summer meal. It is easy to make and can be tailored to your own taste preferences. Experiment with different types of cucumbers, herbs, and dressings to find the perfect combination for you.
