GREEK LEMON AND DILL RICE WITH FETA (RICE COOKER)
From The Ultimate Rice Cooker Cookbook. The combination of dill and lemon is seen throughout Greek cooking, and is wonderful! The authors call for using a 6 cup rice cooker, but I've had no problems using my 3 cup model. Cooking time includes 20 minutes resting time for the rice. This can also be made with brown rice- just increase the chicken stock to 2 2/3 cups.

- Set the machine for the regular white rice cycle and start.

- Close the cover and continue on 'keep warm' for 10 more minutes.
- Transfer the rice to a serving dish, and top with the feta and lemon wedges.
KITTENCAL'S GREEK LEMONY RICE WITH FETA
Make this only if you are a lover of Greek food, this is a full flavored rice with intense flavor and not for those with a plain palette! --- since not everyone has a taste for olives I have left them as optional, I most always add them in -- after making this a few times you will most likely want to adjust some of the ingredients to suit your taste, or you may not, the amounts listed are close to what I use when I make this rice --- this is very good!

SARAH'S FETA RICE PILAF
Rice and orzo pasta merge with the flavors of onion and garlic to create this versatile side dish. Bulgarian feta gives the dish a decadent creaminess while spinach adds beautiful color. You can get Bulgarian feta cheese at most international grocery stores. Bulgarian feta is creamier than the Greek version which tends to be very dry.

Tips:
- Use high-quality rice: A good quality rice will cook evenly and have a fluffy texture. Jasmine rice or basmati rice are good choices for this recipe.
- Rinse the rice: Rinsing the rice before cooking removes the starch and helps prevent the rice from sticking together.
- Use a good ratio of liquid to rice: The ratio of liquid to rice is important for getting the right texture. For this recipe, the ratio is 1 1/2 cups of liquid to 1 cup of rice.
- Add flavorings to the rice: This recipe uses lemon, dill, and feta cheese to flavor the rice. You can also add other herbs and spices, such as oregano, thyme, or cumin.
- Cook the rice until it is tender: The rice is cooked when it is tender and has absorbed all of the liquid. It should take about 18 minutes to cook.
- Let the rice rest before serving: Letting the rice rest for a few minutes before serving allows the flavors to meld and the rice to absorb any remaining liquid.
Conclusion:
Greek lemon and dill rice with feta is a flavorful and easy-to-make dish that is perfect for a weeknight meal. It can be served as a side dish or main course, and it is sure to please everyone at the table. The rice is cooked in a rice cooker, which makes it a hands-off recipe.
