4 boneless skinless chicken breast halves
1 (8 ounce) package small whole mushrooms
1/4 cup fresh lemon juice
1 tablespoon finely chopped fresh oregano or 1 teaspoon dried oregano
1 tablespoon finely chopped of fresh mint or 1 teaspoon dried mint
1 teaspoon salt
2 tablespoons extra virgin olive oil
2 garlic cloves, minced
1/2 red onion, cut into wedges
hot cooked rice

Steps:

  • Cut chicken breast into 1 inch pieces.
  • Place chicken and mushrooms in zip-top plastic bag.

⅓ cup crumbled feta cheese with basil and sun-dried tomatoes
½ teaspoon lemon zest
2 tablespoons fresh lemon juice
2 teaspoons dried oregano

¼ teaspoon crushed dried rosemary
1 pound skinless, boneless chicken breast halves - cut into 1 inch pieces
1 large red onion, cut into wedges
